%20and%20eggs.%20The%20only%20reason%20I%20don't%20make%20it%20with%20chicken%20or%20eggs,%20is%20ecause%20I%20feel%20that%20if%20I'm%20putting%20in%20this%20much%20effort,%20I%20might%20as%20well%20make%20it%20with%20pork.%3C/p%3E%3Cp%3ENana%20used%20to%20make%20the%20most%20fantastic%20Pork%20Indad%20and%20it%20was%20famous%20in%20her%20entire%20extended%20family.%20If%20anyone%20had%20the%20good%20fortune%20of%20eating%20Nana's%20pork%20indad%20even%20once,%20they%20would%20most%20certainly%20request%20it%20the%20next%20time%20they%20were%20due%20to%20come%20over.%3C/p%3E%3Cp%3EWhen%20I%20lived%20in%20Bangalore,%20I%20used%20to%20take%20little%20frozen%20dabbas%20of%20nanas%20pork%20indad%20when%20I%20came%20to%20Mangalore%20for%20the%20weekend,%20and%20savour%20it%20slowly%20over%20the%20week.%20Before%20my%20husband%20first%20visited%20Mangalore,%20he%20would%20just%20about%20taste%20the%20gravy%20of%20pork%20if%20I%20cooked%20it.%20One%20weekend%20with%20Nana's%20Pork%20Indad%20changed%20his%20attitude%20towards%20Pork%20forever.%20If%20I%20remember%20right,%20he%20ate%20Pork%20Indad%20for%20all%206%20of%20his%20meals%20on%20that%20trip.%3C/p%3E%3Cp%3EOn%20the%20Feast%20of%20Mother%20Mary%20-%20Monthisaibinechi%20festh%20-%20on%20September%208th,%20traditionally%20we%20are%20supposed%20to%20eat%20a%20completely%20vegetarian%20meal%20in%20honour%20of%20the%20harvest.%20But%20nana%20also%20used%20to%20make%20us%20a%20nice%20big%20pot%20of%20pork%20indad%20which%20she%20would%20serve%20us%20AFTER%20we%20had%20eaten%20up%20all%20our%20vegetables.%3C/p%3E%3Cp%3ESadly%20none%20of%20her%20daughters%20or%20grand-daughters%20have%20perfected%20the%20same%20halt%20(balance%20of%20flavours%20and%20textures)%20as%20nana.%20After%20Nana%20passed%20away%203.5yrs%20ago,%20I%20hadn't%20even%20attempted%20to%20make%20Pork%20Indad,%20because%20this%20dish%20is%20so%20intricately%20linked%20with%20her%20and%20my%20memories%20of%20her.%20And%20even%20thinking%20of%20her%20food,%20reminds%20me%20how%20much%20I%20still%20miss%20her.%3C/p%3E%3Cp%3EHowever%20on%20this%20years%20Monthisaibinechi%20festh,%20the%20urge%20to%20cook%20Pork%20Indad%20got%20very%20strong%20and%20I%20finally%20succumbed%20to%20the%20temptation%20by%20the%20end%20of%20the%20month%20:)%3C/p%3E%3Cp%3EMy%20version%20is%20not%20as%20good%20as%20nana's,%20but%20with%20a%20few%20tweaks,%20I%20think%20I%20can%20get%20it%20there.%20First%20on%20the%20list%20of%20changes%20would%20be%20to%20buy%20a%20table%20top%20mixer%20grinder%20to%20grind%20this%20masala,%20rather%20than%20in%20a%20mixi.%3C/p%3E%3Cp%3EEach%20Manglorean%20family%20has%20a%20different%20recipe%20for%20Pork%20Indad,%20some%20use%20mint%20leaves,%20some%20use%20dates,%20some%20use%20raisins,%20some%20use%20jaggery%20some%20use%20green%20chillies.%20To%20see%20what%20I'm%20talking%20about,%20you%20can%20check%20out%20Shireen%20at%20Ruchik%20Randhap's%20recipe%20and%20Michelle's%20recipe%20on%20The%20Tiffin%20Box.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EDry%20roast%20all%20the%20dry%20ingredients%20individually.(red%20chillies,%20pepper,%20jeera,%20cloves,%20cinnamon)%3C/p%3E%3Cp%3EGrind%20these%20together%20with%20the%206%20medium%20onions,%20ginger,%20garlic,tamarind,%20green%20chillies%20and%20corriander%20leaves%20and%20a%20little%20vinegar%20when%20grinding%20for%20moisture%3C/p%3E%3Cp%3EIn%20a%20large%20pan,%20cook%20the%20pork%20with%20just%20a%20pinch%20of%20salt.%20The%20meat%20will%20release%20water.%3C/p%3E%3Cp%3EWhen%20the%20water%20dries%20up,%20add%202%20tbsps%20ghee%20and%20fry%20the%20pork%20untill%20the%20fat%20of%20the%20pork%20breaks%20down%20and%20starts%20melting%20.%20(If%20you%20are%20cooking%20with%202%20kgs,%20its%20better%20to%20fry%20it%20in%202-3%20batches,%20so%20the%20meat%20gets%20evenly%20fried)%3C/p%3E%3Cp%3ERemove%20the%20pork%20from%20the%20pan%20and%20keep%20aside,%20there%20should%20be%20a%20lot%20of%20melted%20fat%20+%20ghee%20leftover.%3C/p%3E%3Cp%3EFry%20the%20potato%20slices%20in%20this%20fat%20(dry%20the%20potatoes%20on%20a%20kitchen%20towel%20before%20frying%20to%20prevent%20splattering)%3C/p%3E%3Cp%3ERemove%20the%20fried%20potato%20slices%20and%20keep%20aside.%3C/p%3E%3Cp%3EFry%20the%20sliced%20onion%20in%20the%20fat%20until%20caramelised.%3C/p%3E%3Cp%3EThen%20add%20the%20ground%20masala%20to%20the%20fried%20onions.%3C/p%3E%3Cp%3EFry%20on%20a%20low%20flame,%20adding%20a%20tsp%20or%202%20of%20water%20as%20required%20until%20the%20masala%20is%20completely%20cooked%20and%20no%20raw%20taste%20remains.%3C/p%3E%3Cp%3EAdd%20the%20masala%20water%20(water%20got%20when%20washing%20the%20grinder)%20and%20a%20little%20more%20liquid%20to%20the%20masala%20and%20cook%20until%20it%20bubbles%20(this%20is%20a%20thick%20curry,%20so%20you%20need%20a%20semi-gravy%20consisitency)%3C/p%3E%3Cp%3EAdd%20the%20fried%20meat%20to%20the%20masala%20and%20cook%20until%20the%20fat%20breaks%20down%20some%20more%20and%20the%20meat%20turns%20soft.%3C/p%3E%3Cp%3EAdjust%20salt,%20sugar%20and%20vinegar%20to%20taste.%20The%20dish%20should%20be%20slightly%20sweet,%20with%20a%20hint%20of%20sourness.%3C/p%3E%3Cp%3EGarnish%20with%20fried%20potatoes%3C/p%3E%3Cp%3EThe%20potatoes%20taste%20good%20either%20crisp%20or%20when%20they%20have%20soaked%20up%20the%20masala,%20so%20you%20can%20mix%20some%20fried%20slices%20into%20the%20curry%20and%20reserve%20the%20rest%20for%20garnish.%3C/p%3E%3Cp%3EServe%20hot%20with%20appams,%20sannas,%20panpole%20(neer%20dosa),%20pau%20bread%20or%20white%20rice.%20I've%20served%20it%20with%20appams%20in%20the%20pictuire%20below.%3C/p%3E%3Cp%3EAs%20with%20most%20other%20Manglorean%20pork%20curries,%20indad%20tastes%20better%20with%20age.%20So%20you%20can%20make%20it%202-3%20days%20before%20you%20plan%20to%20serve%20it%20and%20reheat%20it%20daily.%20Adjust%20salt,%20vinegar,%20sugar%20on%20the%20last%20day%20and%20add%20potatoes%20only%20before%20serving.%3C/p%3E){kind=link}
