Veggie Pizza
We had some new neighbors over for ” pizza night” on Friday and decided we should make a veggie pizza in addition to the usual cheese and pepperoni pizzas. I loaded it up with all kinds of veggies and it turned out just right. If you are looking for a substantial pizza without all the soft cheese, especially for those who can’t eat mozzarella, this may be a good pizza to make. I used my oven-dried tomatoes instead of the sun-dried tomatoes to enhance the freshness.

Prepare pizza dough from recipe (Recipe/Misc/Pizza dough). Preheat oven to 400 degrees. Roll dough out to a large circle on parchment paper. Brush oil on the dough. Place tomatoes in a small bowl, add boiling water to just cover; let soak to soften for 15 minutes. Randomly place the veggies onto the dough. Sprinkle the Romano cheese onto the pizza. Add salt and pepper to taste. Bake pizza on pizza stone or cookie sheet. Bake for 10 minutes until light brown.
