Spiced Pear Tart Tatin

We had a celebration dinner for our neighbor’s promotion on Saturday. I asked his wife what was his favorite dessert and she said anything with fruit; so I thought fruit tart. Looking at my recipes on our website, emealsforyou.com, I had several to choose from. Should I go with, the peach tart, the apple tatin, the peach cornbread tart or maybe the true Julia’s Pear Tart Tatin. I finally settled on the Spiced Pear Tart Tatin, basically an upside down pear tart with a spicy cake.

Despite the end results, a great looking and even better tasting dessert; this one is pretty easy to make. You may have to hold your breath while inverting it over a serving plate; but not to worry, you can reposition any pears that stick in the pear onto the cake and no one will notices.

Preheat the oven to 325

degrees. Melt 3 Tb of butter and add the corn syrup and evenly coat the bottom and sides of a 10 inch cake pan with the mixture. Peel and cut pear into large slices. Arrange the pear slices, like spokes of a wheel, on top of the brown sugar mixture. In a mixing bowl, combine the flour, granulated sugar, brown sugar, cinnamon, ginger, allspice, cloves and baking powder, baking soda and salt and thoroughly mix. In another bowl, whisk together the remaining butter, softened, sour cream, egg yolks and vanilla. Add to the dry ingredients and mix with an electric mixer at medium speed about 1 1/2 minutes, scraping down the sides of the bowl occasionally, until thick and smooth. Using a spatula, spread the batter evenly over the fruit, building up the outside edges so the cake will be level when baked. Bake 40 to 50 minutes, until golden brown and a tester inserted in the center comes out clean. Transfer to a rack and cool 3 to 5 minutes briefly place on the stove top for3-5 minutes, and then invert onto a serving plate, repositioning the fruit as necessary.
