I like burgers, I can eat hamburgers day and night, but my better half likes to mix it up. This is an easy way to satisfy both of our burger cravings and keep harmony in the household. If you like shrimp this one is for you. No added fillers, just shrimp and more shrimp.
The trick is processing half the shrimp into a mouse or paste to hold the pieces of shrimp in place and of course sautéing it in butter doesn’t hurt either.

butter, salted
Pull the tails off the shrimp. Cut into 1/2 inch pieces and place in a bowl. Add salt and pepper and mix. Remove half of the shrimp and place in a food processor along with the chives. Pulse until mixture is smooth, paste-like. Remove from the processor and place back in bowl with the shrimp pieces, mix thoroughly. Divide into 4 equal parts. Pat into 4 inch round patties.
Heat butter in a large sauté pan until starting to color. Add shrimp patties and cook 3 minutes per side.
Serve on a toasted roll or over a salad.
