While in NJ last week my mother-in-law gave me a new recipe for roasted green beans with sun-dried tomatoes. This recipe is very simple to make and is a really good way to get your kids to eat vegetables. With the pine nuts and sun-dried tomatoes it can serve as a salad or veggie with your favorite chicken or pork dish.
If you don’t have the sun-dried tomatoes packed in olive oil you can use soft sun-dried tomatoes and add 2 Tb of oil to the recipe.

salt and pepper to taste
Preheat oven to 400. Cut sun-dried tomatoes into strips. Place all the ingredients in a large bowl and toss to combine. Place on a large baking pan and roast for 18 -20 minutes until beans are tender.
