Peach Cornmeal Tart
Here is the Peach Cornmeal Tart recipe I promised last week. Originally it was to be a crostata, but we decided on the tart instead. As we are in Charleston for vacation and everyone pitches in to help in the kitchen, Andrew put this tart together for us. We used the breadcubes to soak up any excess fluid the peaches had while baking.
This tart tasted as good as it looked. Especially when Andrew topped it off with a whipped cream made with bourbon, maple syrup and heavy cream.

Place the first ingredients in the food processor, and pulse until a loose ball forms. Remove from bowl and wrap in plastic wrap and place in the refrigerator for 20 minutes. Process the breadcubes in the food processor until 1/4 inch in size. Place remaining ingredients, excluding the finishing sugar, in a large bowl and mix. Allow to sit while rolling out the dough. Roll dough to fit a 9 inch tart pan. Place dough in pan and press to sides, poke bottom of tart with a fork. Place in the refrigerator for 15 minutes.
Preheat oven to 400 degrees. Arrange the peach mixture evenly around the tart shell; sprinkle the top with any of the breadcrumbs that remain in bowl. Sprinkle the finishing sugar on top of the tart. Place on a cookie sheet to avoid spills and bake for 30 -40 minutes until the top is lightly browned.
