Paris-Brest
Make this recipe and your family/friends will think you are a baking god. In reality, this is one of the easiest desserts to make and is as delicious as it looks. I love to make the dough; this is the same dough for cream puffs, profiteroles and the always impressive Pastry Swans on our website, emealsforyou.com . I made this for dessert the other night for friends and it was a huge hit and the leftovers weren’t bad either.
So, if you are looking for a great dessert, that is easy to prepare, this is the one for you. Pre-cut the slices on the top as the recipe reflects and you will have no problem serving. Enjoy!

Place milk, butter, salt and sugar in a pan over medium heat. Bring to a boil. Remove from heat and add flour, stir until mixed, place back on low heat and stir for 2 minutes. Immediately remove from heat and add to bowl of food processor, add eggs and pulse until just mixed. (you may use a mixer instead) Place dough in a pastry bag and squeeze in 1 inch bead onto a 9 inch circle on parchment paper, squeeze a second ring inside but touching the first ring. Now squeeze a third ring on top and between the two lower rings. Brush with egg wash and bake at 400 degrees for 18-22 minutes, until golden brown. Turn off oven, remove from oven and quickly poke a few small holes with a toothpick in the sides of the puffs to allow steam to exit. Return to open oven and let sit for 20 minutes in oven with the oven door opened.
Cut off and reserve top 1/3, melt the jam in the microwave and paint onto the bottom of the ring. Put the berries into a bowl and add the sugar. Spoon the berries onto the jam, equally around the ring. Put the whipped cream of top of the berries. Carefully cut the reserved top into serving pieces, place on top of the whip cream. Sprinkle with powdered sugar.
