Recipe of the Week – Oven-dried Tomatoes

Oven-dried Tomatoes
They say you eat with your eyes, before you taste with your tongue. This is important for those of us who are passionate about the food we serve. We had an Italian dinner night on Saturday; and I am sure our guests expect to smell the tomato sauce as they arrived. Instead I had a different plan, I decided to serve Chicken Piccata, homemade pasta and some peas with pancetta and onions.
To start the meal, and frankly to allow myself time to prepare the main course, I made the antipasti shown above. Using some ingredients I bought and some I made ( the oven-dried tomatoes, baby asparagus with balsamic vinegar and roasted figs with honey ) I made a welcoming appetizer that pleased both the eyes and the stomachs. If you haven’t tried the oven-dried tomatoes, they are really different from sun-dried tomatoes and really, really good.

Cut tomatoes in thirds lengthwise, place on cookie sheet covered with parchment paper, sprinkle with sugar, salt and pepper, garlic and thyme. Sprinkle with a drop or two of olive oil. Bake at 250- degrees for 2 1/2 hours.
Note: may be re-heated prior to serving.
