Hazelnut Toffee Cheesecake

One of the benefits of making homemade hazelnut toffee at Christmas is that I have a bag of smaller, broken pieces saved in the freezer. So, with a weekend brunch planned it is time to use these to make a New York style cheesecake. I am usually a purest when it comes to cheesecake, just serve it up plan but every once in a while I go “exotic” and make this hazelnut cheesecake. Either way it feeds a small army and keeps everyone very happy.

Try this easy and really impressive treat, perfect for the next time someone says, “you bring the dessert”. Substitute healthbar candies or bits if don’t have some toffee sitting in your freezer.

Have everything at room temperature. Combine brown sugar, bourbon, nuts and butter, spread evenly on bottom of spring- form pan. In a food processor mix everything except the toffee together until very smooth. Stir in toffee. Pour into spring form pan, place on cookie sheet and bake at 350 degrees for 1 hour. Turn off oven and let cheesecake sit ( in oven) for 1 hour.

This is best if made the day before and refrigerated over night.

This recipe serves at least 12, if you scale the recipe to 8 or less bake for only 40 minutes.
