Hot Fudge Profiterole

These profiteroles, you may know them as cream puffs, are the ideal dessert to have for a great dinner party or easy summer fare on a warm night. I love to make them as there is almost something magical in making the dough. You start with water and butter in a pan and wind up with this great dough. If you read some cookbooks they make it sound really hard, adding one egg at a time and then beating it until it is incorporated. That is sooooo yesterday. I take the dough off the stove, put it in the food processor, add all the eggs at once and in 30 seconds you are ready to place them on a cookie sheet to bake. Not only are these easy but they freeze really well; just place in a 300 degree oven for a few minutes before serving and they will crisp right up again.

I have included the recipe for the hot fudge sauce, again this is very easy and freezes well.

Place water, butter, salt and sugar in a pan over medium heat. Bring to a boil. Remove from heat and add flour, stir until mixed, place back on low heat and stir for 2 minutes. Immediately remove from heat and add to bowl of food processor, add eggs and pulse until just mixed.

(you may use a mixer instead) Place large spoonfuls onto a cookie sheet covered in parchment paper, space 2 inches apart. Bake at 400 degrees for 18-22 minutes, until golden brown. Turn off oven, remove from oven and quickly poke a few small holes with a toothpick in the sides of the puffs to allow steam to exit. Return cookie sheet to oven, open oven door and let puffs sit for 20 minutes in oven.

Cut off and reserve top, fill with ice cream, place top back on. May be served with caramel or hot fudge sauce.

For cream puffs fill with vanilla cream. For éclairs make cream puffs and drizzle melted chocolate on top.

Heat sugar, syrup, vanilla, cream and butter in a heavy sauce pan until blended. Mix in cocoa and stir.

Hint: may be kept in the refrigerator for weeks. Re-heat in microwave.
