Chicken with Lemons and Olives
I saw this recipe in the NY Times the other day and thought it would be a nice change from the standard roasted chicken dinner. Of course the Times version was Gucci’d up with olives with their stems and Meyer lemons but the basic recipe (found below) is really good with the lemons and olives adding just the right touch to the dish.
Serve this at your next casual dinner party; Gucci it up if you like. I know you will enjoy it.

parsley, flat leaf, chopped
Cut chicken breasts in half and pat the chicken dry with a paper towel. Place chicken in an oven-proof baking dish, skin side up. Sprinkle chicken with salt and pepper, hot pepper flakes, garlic, fennel seeds, chopped rosemary, and olive oil. Rub spices into both sides of the chicken. Cut lemons into wedges and spread around the baking dish. Allow to marinate for 15 minutes while preheating the oven to 375. Place baking dish in oven for 20 minutes, uncovered, then sprinkle the olives and broth over the chicken, cover and bake for 45 minutes, until tender. Place under the broiler until lightly browned. Remove the chicken, lemons and olives, reduce pan juices, plate; serve pan juices on the side. Serve over creamy polenta.
