Cherries Jubilee
The kids and the kids’ kids were coming for dinner this past week. The requested meal, by unanimous decree, was slow-roasted pork ribs. Cooking the ribs at 275 degrees for 3 hours allows the dry rub to flavor the meat without the ribs becoming fatty or sticky. Teamed with au gratin potatoes, salad and homemade French rolls; this was a comfort meal to remember as a heavy rain set in. After all of this we wanted a dessert that was tasty but kid friendly. We omitted the brandy and the flaming due to the grandkids. With or without the flames this a a great dessert and really easy to put together.

Place cherries, cinnamon and sugar in a medium size pot. Remove about half of the liquid and mix in a small bowl with the arrowroot. Return to pot and mix well, heat until thickened. Add brandy or rum and heat. Careful as this will flame, light cherries with a candle lighter. Allow flame to subside and serve over good vanilla ice cream.
