Caramelized onion pillows
It was paella night on Saturday. Some of our new neighbors came over to get to know each other and we tried to stay with the tapas theme with the appetizers. Caramelized onions are always a good choice as they provide both sweet and tart flavors. Add in the crunch of the puff pastry and you have a great finger food for the cocktails while the paella is sizzling in the pan.
The onions are also great on top of fish and steak and the leftover onions freeze well for the next time.
Caramelized Onion Pillows

Preheat oven to 400 degrees. Put oil in sauté pan. Slice onion and add to pan; cook until opaque. Add garlic, brown sugar, vinegar, thyme and salt and pepper to taste. Cook until syrupy. Cut puff pastry into 2 inch squares; cut ½ inch inside square. ( cut only ½ way through the pastry ). Place a Tb of the onions in the center of the inner square; brush the egg wash on the edges and bake until golden, about 15 -20 minutes.
