Betty’s German Potato Salad
After all the turkey, all the appetizers and all the desserts; it was time or a quite, easy dinner on Sunday night. The guests were gone, football was on the TV and we decided that the perfect dinner was a grilled burger with some German potato salad. This was the potato salad my mom made while we were growing up. Lots of bacon, vinegar and taste.
I did “gussy it up” a little as all I had were fingerling potatoes. It was still as good as I remembered it. Serve it at room temperature or even heated just a little.

Boil potatoes with the skins on for 25 minutes or so, until they are just tender without falling apart. Cook bacon in a large pan. Remove when browned; add onions to the pan and sauté until just tender, not crispy. Add vinegar and oil. Peel potatoes when they are still warm and cut into bite size pieces. Cut bacon in a large dice, add back to pan and then pour mixture over potatoes. Let stand on counter for an hour, stirring occasionally to blend. Add salt to taste. May be refrigerated at this point; be sure to allow the potato salad to come to room temperature prior to serving.
