Bacon-wrapped Shrimp
We were to bring some appetizers to a cocktail party this weekend and wanted something different instead of the usual. Thinking back to our vacation in Charleston last year we remembered these shrimp and how well they were received, not to mention how quickly they disappeared from the tray. They look harder to make then they really are and who doesn’t like the idea of shrimp, bacon and cheese.

Butterfly and peel the shrimp, flattening them, leaving the tails whole. Cut bacon into 3 “ pieces. Roast the garlic, with skins on, in a frying pan until light brown. Remove the skins and mince the roasted garlic. In a separate bowl combine the cheeses, garlic, cilantro and cracked black pepper and mix. Place the flattened shrimp on a flat surface, place a tsp of the cheese mixture on the shrimp and wrap in one piece of bacon. Place spear into the sides of the shrimp. Pre-heat a frying pan on high, place shrimp in pan and cook, turning as needed until the bacon is fully cooked. The shrimp will be cooked at this time. Remove and place on paper towels to drain. Serve either warm or at room temperature.
