Butterscotch Sauce
We are just back from our yearly vacation to Charleston. We go with a group and rent a large house on the beach. Rather than fight the crowds each night at restaurants, we like to stay in and prepare really good meals at the beach house. I cook both a seafood and a carnivore meal each night. This year we planned the entire week of meals using our website, emealsforyou.com, creating a meal plan named for each day and then having the program create the shopping list for each day’s meals. Using the shopping list as a starting point I was able to add or subtract from the lists and then have everyone take a turn at the daily run to the local Piggly-Wiggly store, freeing my time up for the beach and playing tourist. Each meal was scaled to the number of people who were having the fish or the meat, and those who had both. Leftovers or mustgoes as we call them were plentiful and made great lunches the next day.
Now for the promise recipe. This is the best and easiest butterscotch sauce recipe you will ever need. We served it over profiteroles.

Melt the butter with the brown sugar and the 1/4 cup of heavy cream, stirring until smooth. in a flat bottom pan. Cook at a bubbling simmer for three minutes. Remove from heat and stir in the remaining 6 tablespoons of cream. Let cool a bit, then stir in the scotch.
