.%3C/p%3E%3Cp%3EIn%20my%20singleton%20days%20in%201999-2000,%20I%20had%20a%20group%20of%208-10%20Bengali%20&%20Oriya%20friends%20who%20rented%20the%20first%20floor%20of%20a%20house%20in%20Bangalore.%20My%20apartment%20had%20a%20very%20basic%20kitchen,%20but%20these%20guys%20had%20a%20slightly%20larger%20kitchen.%20If%20I%20was%20in%20Bangalore%20for%20the%20weekend,%20then%20most%20Sunday%20afternoons%20were%20spent%20with%20this%20group%20of%20friends,%20because%20they%20would%20make%20awesome%20mutton%20curry%20with%20hot%20rice%20that%20was%20so%20welcoming%20after%20a%20week%20of%20slogging%20away%20at%20office%20and%20eating%20fast%20cooked%20meals.%20(normally%20pulaos%20of%20every%20kind%20where%20meat%20and%20veggies%20were%20tossed%20into%20a%20pressure%20cooker%20with%20herbs%20and%20spices%20&%20cooked%20for%203%20whistles)%20Plus%20after%20Saturday%20night%20out%20on%20the%20town,%20this%20mutton%20curry%20really%20hit%20the%20right%20spot%20at%203pm%20after%20waking%20up%20at%202pm.%3C/p%3E%3Cp%3EI%20normally%20don't%20cook%20a%20lot%20with%20mutton.%20The%20quality%20of%20mutton%20that%20you%20get%20in%20Mangalore%20is%20not%20very%20good.%20It%20is%20stringy,%20fatty%20and%20sometimes%20a%20bit%20smelly,%20so%20mum%20n%20grandma%20also%20rarely%20cooked%20mutton%20unless%20it%20was%20a%20traditional%20polov%20(Mutton%20&%20ash%20gourd%20curry)%20needed%20for%20some%20ceremony%20or%20the%20occasional%20stew,%20butI%20remember%20grandma%20used%20to%20add%20beef%20to%20that%20dish%20just%20to%20get%20some%20better%20quality%20meat%20into%20it.%3C/p%3E%3Cp%3EPersonally,%20I%20mostly%20cook%20mutton%20only%20in%20Biriyanis%20or%20the%20occasional%20chops.%20I%20did%20cook%20more%20with%20mutton%20wheil%20I%20was%20in%20Bombay%20&%20I%20do%20believe%20that%20the%20best%20quality%20mutton%20in%20India%20is%20found%20only%20in%20Maharashtra%20and%20Rajasthan.%20So%20I%20was%20quite%20suprised%20to%20recently%20learn%20that%20a%20lot%20of%20Rajasthan's%20mutton%20is%20imported%20from%20Gujarat%20under%20the%20so-called%20%22Pink%20Revolution%22%20akin%20the%20%22White%20Revolution%22%20where%20Gujarat%20exports%20milk%20&%20milk%20products%20to%20other%20Indian%20states%3C/p%3E%3Cp%3EAs%20I%20was%20hosting%20a%20dinner%20party%20for%2020,%20I%20thought%20I%20should%20do%20something%20other%20than%20the%20regular%20biryani%20with%20mutton%20(as%20cooking%20biryani%20for%2020%20needs%20much%20bigger%20pots%20than%20I%20have)%20or%20a%20stew%20(since%20I%20was%20already%20making%20the%20chicken%20curry%20with%20coconut%20milk)%20and%20I%20remembered%20the%20simple%20homestyle%20mutton%20curry%20that%20my%20Bengali%20friends%20used%20to%20make%20on%20the%20weekends.%20I%20looked%20up%20a%20couple%20of%20my%20recipe%20books%20and%20some%20online%20recipes,%20then%20decided%20on%20the%20following.%20I%20cooked%20with%202%20kilos%20of%20mutton.%201kg%20boneless%20+%201%20kg%20with%20bone%20so%20you%20can%20halve%20the%20quantities%20for%201%20kg.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3Ecorriander%20leaves%20to%20garnish%20-%20optional%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EBring%20the%20marinated%20meat%20to%20room%20temperature%20if%20refrigerated.%3C/p%3E%3Cp%3EAdd%20a%20little%20salt%20&%201%20tbsp%20turmeric%20to%20the%20chopped%20potatoes%20and%20mix%20well.%3C/p%3E%3Cp%3EIn%20a%20large%20pan/%20pressure%20cooker,%20fry%20the%20potatoes%20in%202-3%20tbsp%20mustard%20oil,%20until%20they%20start%20to%20brown/crisp%20up%20on%20the%20outside.Stir%20frequently%20to%20prevent%20potatoes%20sticking%20to%20the%20pan.%3C/p%3E%3Cp%3ERemove%20the%20potatoes%20from%20the%20pan,%20leaving%20the%20excess%20oil%20behind.%3C/p%3E%3Cp%3EAdd%20the%20rest%20of%20the%20oil%20to%20the%20pan.%3C/p%3E%3Cp%3EWhen%20hot,%20season%20with%20the%20bay%20leaves%20and%20dried%20red%20chillies.%3C/p%3E%3Cp%3EBefore%20the%20chillies%20can%20burn,%20add%20the%20sliced%20onion%20and%20fry%20well%20until%20they%20start%20to%20brown.%3C/p%3E%3Cp%3EStir%20frequently%20to%20fry%20evenly%20and%20prevent%20them%20from%20sticking%20to%20the%20bottom%3C/p%3E%3Cp%3EAdd%20the%20marinated%20meat%20(but%20reserve%20the%20excess%20liquid%20marinade)%20to%20the%20pan%20with%20the%20remaining%20turmeric,%20chilli,%20corriander%20&%20jeera%20powders%20and%20some%20salt%3C/p%3E%3Cp%3EStir%20frequently%20to%20prevent%20meat%20sticking%20to%20the%20pan%20and%20cook%20till%20all%20the%20liquid%20dries%20up%20and%20the%20meat%20is%20well%20coated%20with%20the%20marinade%20and%20powders%20and%20slightly%20browned..%3C/p%3E%3Cp%3EAdd%20the%20reserved%20marinade,%20fried%20potatoes%20and%206-8%20cups%20of%20water%20(depending%20on%20how%20thin%20you%20want%20the%20stew).%3C/p%3E%3Cp%3ECover%20and%20cook%20till%20done%20(3%20whistles%20in%20a%20Hawkins%20pressure%20cooker)%3C/p%3E%3Cp%3EAdjust%20salt%20to%20taste.%3C/p%3E%3Cp%3ECook%20uncovered%20if%20you%20want%20to%20thicken%20the%20gravy%3C/p%3E%3Cp%3EJust%20before%20serving,%20squeeze%20lemon%20juice%20or%20s
