%20except%20occasionally%20in%20the%20monsoons,%20when%20fish%20wasn't%20available%20and%20to%20have%20a%20change%20from%20meat.%3C/p%3E%3Cp%3EBut%20we%20kids%20often%20turned%20up%20our%20noses%20at%20dhals%20in%20those%20days%20and%20much%20preferred%20the%20humbler%20saar%20/%20daali%20thove%20-%20a%20thin%20lentil%20dish,%20to%20the%20time%20and%20effort%20intensive%20rajma%20or%20channa.%20So,%20obviously%20mom%20and%20nana,%20hardly%20cooked%20with%20rajma.%3C/p%3E%3Cp%3EWhen%20I%20was%20in%20hostel%20in%20Jamshedpur%20however,%20rajma%20was%20on%20the%20menu%20once%20a%20week%20and%20this%20was%20one%20of%20the%20few%20dishes%20that%20was%20made%20in%20the%20mess%20that%20went%20well%20with%20rice,%20so%20I%20hardly%20missed%20a%20meal%20when%20rajma-chawal%20was%20on%20the%20menu.%20I%20later%20had%20much%20better%20tasting%20Rajma,%20cooked%20by%20mothers%20of%20my%20Punjabi%20and%20UP%20friends%20when%20they%20knew%20that%20a%20South%20Indian%20rice-eating%20girl%20was%20headed%20to%20their%20home%20for%20a%20meal.%20My%20husband's%20mom%20and%20maami%20(mothers%20brothers%20wife)%20make%20some%20kick-ass%20rajma%20too.%3C/p%3E%3Cp%3EThis%20recipe%20however,%20is%20my%20own.%20You%20can%20stir%20in%20some%20cream%20in%20the%20end%20if%20you%20want%20to%20make%20the%20whole%20thing%20creamier.%20I%20prefer%20stirring%20in%20some%20smoothly%20beaten%20yoghurt/dahi%20to%20keep%20it%20low%20fat.%20But%20it%20can%20be%20served%20as%20is,%20especially%20if%20you%20want%20to%20keep%20it%20vegan.%3C/p%3E%3Cp%3EYou%20do%20get%20%22rajma%20masala%22%20powders%20in%20the%20market,%20my%20Mother-in-law%20feels%20that%20the%20%22meat%20masala%22%20powder%20works%20very%20well%20with%20Rajma.%20In%20a%20pinch,%20I%20have%20also%20used%20%22channa%20masala%22%20powder.%20Most%20Indian%20mixed-masala%20powders%20would%20work%20reasonably%20well%20with%20this%20dish.%20Ideally%20the%20masala%20powder%20will%20have%20a%20bit%20of%20powdered%20amchoor%20(dried%20mango),%20jeera%20(cumin),%20haldi%20(turmeric),%20dhaniya%20(coriander),%20cinnamon%20and%20chillies.%20You%20can%20use%20any%20masala%20powder%20that%20has%20these%20spices%20and%20maybe%20a%20%20few%20more,%20don't%20worry%20about%20it%20too%20much.%3C/p%3E%3Cp%3EHow%20much%20masala%20you%20add%20will%20depend%20on%20which%20brand%20you%20are%20using,%20how%20strong%20their%20masalas%20are%20and%20how%20spicy%20you%20like%20your%20food.%20So%20keep%20stirring,%20smelling%20and%20tasting%20to%20find%20your%20balance.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3ESoak%20the%20rajma%20for%208%20hours%20/%20overnight%20and%20pressure%20cook%20till%20done.%3C/p%3E%3Cp%3EDiscard%20the%20water%20that%20rajma%20is%20boiled%20in.%20This%20is%20the%20only%20dhal%20whose%20cooking%20water%20we%20discard.%3C/p%3E%3Cp%3EGrind%20the%20onions,%20%20half%20the%20chillies,%20garlic%20and%20half%20the%20ginger%20to%20a%20smooth%20paste.%3C/p%3E%3Cp%3EIn%20a%20large%20pan,%20heat%20the%20oil.%3C/p%3E%3Cp%3EAdd%20the%20hing%20and%20methi%20seeds%20(this%20with%20the%20jeera,%20helps%20reduce%20the%20gassiness%20caused%20by%20rajma)%3C/p%3E%3Cp%3EAs%20the%20seeds%20start%20to%20brown,%20add%20the%20cinnamon%20and%20the%20jeera%20seeds.%3C/p%3E%3Cp%3EWhen%20the%20jeera%20seeds%20splutter,%20add%20the%20julienned%20ginger%20and%20fry%20till%20it%20crisps%20up.%3C/p%3E%3Cp%3ENow%20add%20the%20ground%20onion%20paste%20and%20fry%20on%20a%20slow%20flame,%20till%20the%20onion%20paste%20is%20cooked.%3C/p%3E%3Cp%3EIn%20the%20meanwhile,%20grind%20the%20tomatoes%20in%20the%20same%20mixi%20that%20the%20onion%20paste%20was%20ground%20in.%3C/p%3E%3Cp%3EWhen%20the%20onion%20paste%20is%20cooked,%20add%20the%20tomato%20puree%20(fresh%20or%20packaged)%20and%20the%20rajma%20masala%20and%20cook%20for%20a%20few%20minutes.%3C/p%3E%3Cp%3ESlit%20the%20remaining%20green%20chillies%20and%20add%20to%20the%20curry%20paste.%3C/p%3E%3Cp%3ERinse%20the%20mixi%20in%20a%20little%20water%20and%20add%20this%20water%20to%20the%20curry.%3C/p%3E%3Cp%3ECook%20on%20slow%20flame%20until%20there%20is%20no%20raw%20taste%20left.%3C/p%3E%3Cp%3ENow%20add%20the%20cooked%20rajma.%3C/p%3E%3Cp%3ELet%20it%20bubble%20away%20on%20a%20slow%20flame%20for%205-10%20minutes.%3C/p%3E%3Cp%3ETake%20it%20off%20the%20fire%20and%20add%20the%20smoothly%20beaten%20cream%20or%20yoghurt%20if%20using.%3C/p%3E%3Cp%3EGarnish%20with%20chopped%20coriander%20and%20serve%20hot%20with%20phulkas%20or%20rice.%3C/p%3E%3Cp%3EI%20love%20serving%20this%20with%20a%20side%20of%20onion%20raita%20and%20we%20have%20shifted%20almost%20completely%20to%20brown%20rice%20at%20home%20now.%3C/p%3E){kind=link}
