I had a comment on my blog the other day where one of my readers mentioned waking up at 4am in order to have some me time before her husband and children wake up. I totally understand this need to have time to ones self. Dave and I do nearly everything together. We wake up at the same time and leave for work together. %3C/p%3E%3Cp%3EI%20had%20a%20comment%20on%20my%20blog%20the%20other%20day%20where%20one%20of%20my%20readers%20mentioned%20waking%20up%20at%204am%20in%20order%20to%20have%20some%20me%20time%20before%20her%20husband%20and%20children%20wake%20up.%20I%20totally%20understand%20this%20need%20to%20have%20time%20to%20ones%20self.%20Dave%20and%20I%20do%20nearly%20everything%20together.%20We%20wake%20up%20at%20the%20same%20time%20and%20leave%20for%20work%20together.%20We%20share%20an%20office%20even%20though%20we%20each%20have%20our%20own%20businesses%20and%20our%20desks%20are%20next%20to%20each%20other.%20Until%20I%20leave%20the%20office%20sometime%20during%20the%20day,%20we%20have%20been%20together%20since%20he%20got%20home%20from%20work%20the%20night%20before.%20I%20usually%20work%20in%20the%20office%20until%2012h30%20and%20then%20I%20head%20out%20to%20see%20customers,%20go%20to%20gym%20and%20do%20the%20shopping.%20But,%20that%20time%20is%20still%20spent%20with%20or%20near%20people.%20I%20totally%20look%20forward%20to%204pm%20when%20I%20am%20alone,%20with%20the%20dogs%20and%20the%20television.%20I%20make%20myself%20a%20cup%20of%20coffee,%20settle%20down%20on%20the%20couch%20and%20spend%20an%20hour%20watching%20a%20programme%20Dave%20does%20not%20watch%20with%20me.%20Dave%20gets%20home%20between%2017h30%20and%2018h30%20depending%20on%20whether%20he%20has%20gone%20to%20gym%20or%20not%20and%20so%20I%20get%20a%20nice%20chunk%20of%20time%20to%20myself.%20I%20use%20the%20time%20from%20after%20my%20potato%20couch%20episode%20to%20work%20on%20recipes.%20Either%20writing%20them%20up,%20getting%20the%20ingredients%20I%20need%20together,%20or%20making%20them.%20I%20like%20to%20set%20aside%20one%20day%20a%20weekend%20to%20make%20a%20lot%20of%20recipes,%20but%20this%20does%20not%20always%20work%20out%20as%20planned.%20Especially%20when%20we%20have%20arrangements.%20A%20few%20weekends%20ago%20I%20had%20a%20tea%20party%20on%20the%20Saturday%20and%20a%20BBQ%20at%20friends%20on%20the%20Sunday.%20I%20was%20asked%20to%20bring%20a%20dessert%20and%20chose%20to%20make%20this%20New%20York%20cheesecake.%20I%20could%20prepare%20the%20ingredients%20in%20between%20all%20my%20arrangements%20and%20once%20in%20the%20oven,%20leave%20the%20cheesecake%20to%20do%20its%20own%20thing.%3C/p%3E%3Cp%3ENew%20York%20Cheesecake%3C/p%3E%3Cp%3ENew%20York%20Cheesecake%3C/p%3E%3Cp%3E175g%20flour,%20sifted,%20plus%20extra%20for%20dusting%20125g%20butter,%20cubed,%20plus%20extra%20for%20greasing%2050g%20castor%20sugar%20-%20I%20used%20fructose%20zest%20of%201%20lime%201%20egg%20yolk,%20lightly%20beaten%20500g%20low%20fat%20cream%20cheese%20250g%20smooth%20cottage%20cheese%20315g%20castor%20sugar%20-%20I%20used%20fructose%20Juice%20of%201%20lime%2034g%20flour%204%20eggs%202%20egg%20yolks%2050mls%20cream,%20whipped%20170g%20fruit%20concentrate%20(optional)%20fresh%20fruit%20of%20choice%20for%20decorating%20-%20I%20used%20sungold%20kiwi%20fruit%3C/p%3E%3Cp%3EPlace%20the%20flour%20into%20a%20food%20processor%20Add%20the%20butter%20and%20pulse%20until%20it%20resembles%20fine%20breadcrumbs%20Add%20the%20sugar,%20zest%20and%20egg%20yolk%20Process%20until%20the%20dough%20comes%20together%20Lightly%20dust%20your%20work%20surface%20and%20knead%20the%20dough%20lightly,%20until%20soft%20Flatten%20into%20a%20disc%20and%20cover%20with%20cling%20film%20Place%20into%20the%20fridge%20and%20leave%20to%20rest%20for%2030%20minutes%20Line%20the%20bottom%20of%20a%20spring%20form%20tin%20and%20butter%20the%20sides%20Roll%20the%20pastry%20disc%20out%20until%20it%20is%20the%20same%20size%20as%20the%20bottom%20of%20the%20tin%20Place%20the%20pastry%20disc%20into%20the%20tin%20and%20push%20out%20using%20your%20fingers%20until%20the%20pastry%20is%20lined%20up%20completely%20with%20the%20edge%20Place%20into%20the%20fridge%20Preheat%20the%20oven%20to%20190%C2%B0%20Celsius%20Bake%20the%20pastry%20blind%20for%2010%20minutes%20Remove%20the%20baking%20paper%20and%20beans%3C/p%3E%3Cp%3ESet%20aside%20to%20cool%20while%20you%20make%20the%20filling%20Preheat%20the%20oven%20to%20160%C2%B0%20Celsius%20Place%20the%20cream%20cheese,%20cottage%20cheese,%20sugar,%20lime%20juice%20and%20flour%20into%20a%20mixing%20bowl%20Whisk%20on%20a%20low%20setting%20until%20smooth%20Place%20the%20eggs%20and%20egg%20yolks%20into%20a%20small%20mixing%20bowl,%20and%20whisk%20to%20slacken%20Add%20the%20eggs%20slowly%20to%20the%20cream%20cheese%20mixture,%20making%20sure%20they%20are%20properly%20mixed%20in%20Gently%20whisk%20in%20the%20cream%20Pour%20the%20fruit%20concentrate%20into%20the%20mixture%20and%20swirl%20in%20to%20get%20a%20ripple%20effect%20Pour%20the%20filling%20onto%20the%20pastry%20base%20Bake%20for%2010%20minutes%20and%20then%20reduce%20the%20temperature%20to%20140%C2%B0%20Celsius%20Baking%20for%2045%20minutes%20Switch%20the%20oven%20off%20and%20leave%20the%20cheesecake%20in%20for%2015%20minutes%20Remove%20from%20the%20oven%20and%20set%20aside%20to%20cool%20in%20the%20tin%20Remove%20from%20the%20tin,%20place
