Citrus Drops

200g flour 85g caster sugar - I used fructose 125g cold butter, cubed 15mls grapefruit zest 2.5mls vanilla paste 15mls cold water 325g caster sugar - I used fructose 6 eggs 250mls freshly squeezed grapefruit juice zest from the grapefruit, finely chopped

Preheat the oven to 180° Celsius Sift the flour and sugar into bowl Place into a food processor Add the butter, zest and vanilla paste Blitz until it resembles fine breadcrumbs Add the water and process until a dough forms Place the dough into a lined rectangular baking tin Press down with a back of a spoon Bake for 20 minutes Place the sugar and eggs into a bowl Whisk until at the ribbon stage Add the grapefruit juice and zest Whisk to combine Once the base has baked, pour the liquid into the tin (I find this easier to do in the oven) Bake for 25 minutes until just set Place onto a cooling rack and leave to cool completely in the tin before cutting Top with a dusting of icing sugar if required, just before serving 3.2.2925
