%20and%20Blossom%20Cafe,%20for%20example.%20Up%20until%20Friday%20night,%20every%20vegan%20meal%20I've%20ever%20had%20has%20been%20extraordinary.%20While%20our%20meal%20at%20Pure%20Food%20and%20Wine%20could%20indeed%20be%20called%20%22extraordinary%22%20...%20its%20for%20all%20the%20wrong%20reasons.%3C/p%3E%3Cp%3EI%20chose%20the%20trio%20of%20%22pizzettes%22%20as%20my%20second%20course%20(don't%20even%20ask%20about%20the%20first)%20and,%20honestly,%20I'm%20at%20a%20loss%20to%20describe%20them.%20Certainly,%20they%20were%20like%20nothing%20I've%20ever%20seen.%20The%20first%20of%20the%20trio%20had%20an%20unpalatable%20rosemary-ish%20%22crust%22%20topped%20with%20a%20paste%20of%20some%20sort%20that%20I%20can%20only%20describe%20a%20rancid.%20Yes,%20rancid.%20I'm%20quite%20certain%20this%20paste%20was%20made%20of%20some%20kind%20of%20nuts%20that%20had%20gone%20off.%20I%20wish%20I%20were%20kidding,%20I'm%20not.%20The%20paste%20was%20topped%20with%20halved%20grape%20tomatoes%20and%20something%20which%20bore%20a%20vague%20resemblance%20to%20shredded%20cheese.%20One%20bite%20was%20all%20it%20took%20for%20me%20to%20know%20that%20all%20was%20not%20well%20with%20this%20little%20creation.%3C/p%3E%3Cp%3EI%20never%20made%20it%20to%20the%20other%20two%20unappealing%20circles%20of%20mystery%20which%20shared%20the%20plate.%20And%20my%20friend,%20who%20ordered%20the%20same%20dish,%20had%20to%20have%20the%20staff%20take%20it%20away%20simply%20because%20she%20couldn't%20bear%20the%20smell%20of%20that%20paste.%20Trust%20me,%20she%20was%20the%20wiser%20of%20the%20two%20of%20us%20-%20hours%20later%20I%20was%20regretting%20what%20little%20I%20ate%20of%20that%20mess.%3C/p%3E%3Cp%3EIt%20is,%20perhaps,%20unfair%20to%20judge%20a%20restaurant%20after%20only%20one%20visit.%20I%20realize%20that.%20But%20here's%20the%20thing%20-%20I%20can't%20envision%20a%20circumstance%20in%20which%20I'd%20be%20compelled%20to%20give%20this%20place%20a%20second%20chance.%20It%20was%20just%20that%20bad%20across%20the%20board.%20And,%20to%20make%20matters%20worse,%20its%20expensive.%20Needless%20to%20say,%20we%20were%20still%20hungry%20when%20we%20left.%20Feh.%3C/p%3E%3Cp%3EAs%20an%20antidote,%20I'm%20prescribing%20meat%20and%20plenty%20of%20it.%20Cooked%20meat%20-%20as%20in%20all%20the%20way%20cooked.%20People,%20there%20is%20a%20reason%20God%20invented%20heat%20and%20the%20grill%20pan.%20We%20need%20burgers.%20Stat!%3C/p%3E%3Cp%3EHeat%20the%20olive%20oil%20in%20a%20non-stick%20skillet%20over%20medium-high%20heat%20and%20to%20it%20add%20the%20shallots,%20mushrooms,%20a%20pinch%20of%20salt%20and%20pepper%20and%20a%20pinch%20of%20Herbs%20de%20Provence.%20Saute%20until%20the%20shallots%20have%20become%20translucent%20and%20the%20mushrooms%20have%20softened%20and%20are%20beginning%20to%20brown,%20about%203%20to%204%20minutes.%20Remove%20from%20heat,%20reserve%20and%20allow%20to%20cool.%3C/p%3E%3Cp%3EMeanwhile,%20in%20a%20large%20mixing%20bowl%20combine%20the%20ground%20chicken,%20Bavarian%20Seasoning,%20poultry%20seasoning,%20rosemary,%20parsley,%20a%20bit%20of%20salt%20and%20pepper,%20the%20shredded%20pear%20and%20the%20reserved%20mushroom%20and%20shallot%20mixture.%20Mix%20well%20to%20combine.%20Add%20the%20beaten%20egg%20and%20the%20oatmeal%20and%20mix%20well%20to%20combine.%20Divide%20the%20mixture%20into%204%20equal%20parts%20and%20shape%20into%204%20patties.%3C/p%3E%3Cp%3EHeat%20a%20grill%20pan%20over%20high%20heat%20and%20brush%20it%20with%20a%20bit%20of%20oil.%20When%20the%20pan%20is%20good%20and%20hot,%20but%20not%20yet%20smoking,%20add%20the%20chicken%20burgers%20and%20grill%20over%20medium-high%20heat,%20turning%20once,%20about%205%20to%206%20minutes%20per%20side,%20or%20until%20cooked%20throughout.%20Chicken%20burgers%20should%20be%20firm%20to%20the%20touch%20when%20done%20and%20fully%20cooked%20throughout.%20Brush%20the%20grilled%20burgers%20with%20a%20bit%20of%20balsamic%20vinegar%20on%20each%20side,%20then%20top%20with%20some%20sliced%20or%20crumbled%20blue%20cheese,%20cover%20the%20pan%20and%20allow%20the%20cheese%20to%20melt.%20Serve%20the%20finished%20burgers%20on%20whole%20wheat%20rolls%20or%20baguettes,%20topped%20with%20some%20caramelized%20onions%20and%20atop%20some%20crisp%20romaine%20lettuce.%20Enjoy!%3C/p%3E%3Cp%3E*Notes:%20While%20not%20strictly%20necessary,%20the%20Penzey's%20Bavarian%20Seasoning%20is%20a%20really%20nice%20blend%20and%20well%20suited%20to%20this%20savory,%20earthy%20burger.%20Santa%20left%20me%20a%20jar%20of%20it%20in%20my%20stocking%20this%20year%20and%20enjoy%20it,%20I%20do!%20If%20you%20don't%20happen%20to%20have%20any,%20fear%20not,%20add%20whatever%20spices%20you%20like%20or%20simply%20proceed%20without.%3C/p%3E%3Cp%3EI%20happen%20to%20like%20a%20bit%20of%20shredded%20pear%20in%20this%20mixture%20-%20it%20adds%20both%20flavor%20and%20moisture,%20which%20is%20altogether%20necessary%20when%20using%20ground%20chicken%20breast.%20You%20could%20certainly%20substitute%20some%20apple,%20if%20you%20like,%20in%20place%20
