,%20we%E2%80%99d%20often%20go%20to%20Jewish%20delis.%3C/p%3E%3Cp%3EThe%20New%20York%20deli%20is%20unmatched%E2%80%A6%20I%E2%80%99ve%20lived%20in%20numerous%20places%20and%20traveled%20enough%20to%20sample%20it%20elsewhere%E2%80%A6%20but%20nothing%20comes%20close%20to%20a%20New%20York%20Jewish%20deli%E2%80%A6.%20okay..%20some%20have%20come%20close%E2%80%A6%20put%20truth%20be%20told%E2%80%A6%20they%20were%20usually%20New%20York%20transplants%E2%80%A6.%20(I%E2%80%99m%20sure%20I%E2%80%99ll%20get%20some%20reaction%20from%20that%20statement)%E2%80%A6%3C/p%3E%3Cp%3EAnyway%20before%20I%20get%20totally%20off%20track%20here%E2%80%A6%20a%20lot%20of%20these%20delis%20would%20have%20a%20restaurant%20portion%20of%20the%20store%E2%80%A6%20and%20Blintzes%20would%20invariably%20be%20on%20the%20menu%E2%80%A6.%20and%20these%20were%20not%20the%20frozen%20variety%E2%80%A6%20these%20blintzes%20made%20the%20frozen%20type%20pale%20in%20comparison%E2%80%A6%20topped%20with%20sour%20cream%E2%80%A6%20well%E2%80%A6%20just%20heaven%20on%20earth.%3C/p%3E%3Cp%3ESo%20just%20what%20are%20blintzes?%E2%80%A6%20well%20%E2%80%A6.they%E2%80%99re%20a%20crepe%20of%20sorts%20with%20fillings%E2%80%A6%20usually%20cheese%20or%20a%20fruit%20type%E2%80%A6%20sometimes%20potato%20(those%20are%20terrific%20with%20applesauce)%E2%80%A6%20the%20crepe%20is%20rolled%20up%20and%20then%20fried%20in%20oil%20so%20the%20crepe%20becomes%20a%20bit%20crisp.%3C/p%3E%3Cp%3EFor%20a%20little%20history....%3C/p%3E%3Cp%3EThe%20English%20word%20blintz%20comes%20from%20the%20Yiddish%20word%20blintze,%20which%20in%20turn%20comes%20from%20the%20word%20blin%20which%20has%20Slavic%20origins.%3C/p%3E%3Cp%3EAccording%20to%20Wikipedia%E2%80%A6.%20Blins%20had%20a%20ritual%20significance%20for%20early%20Slavic%20people%20in%20pre-Christian%20times%20since%20they%20were%20a%20symbol%20of%20the%20sun,%20due%20to%20the%20round%20form%20(mine%20were%20never%20round..%20but%20we%E2%80%99ll%20continue%20right%20along%20with%20the%20history)%E2%80%A6.They%20were%20traditionally%20prepared%20at%20the%20end%20of%20winter%20to%20honor%20the%20rebirth%20of%20the%20new%20sun%20(Butter%20Week%E2%80%A6%20I%20like%20the%20name%20of%20that%E2%80%A6%20Paula%20Deen%20are%20you%20listening?).%20This%20tradition%20was%20adopted%20by%20the%20Orthodox%20church%20and%20is%20carried%20on%20to%20the%20present%20day.%3C/p%3E%3Cp%3EBlintzes%20were%20made%20popular%20in%20the%20United%20States%20by%20Jewish%20immigrants%20who%20used%20them%20in%20Jewish%20cuisine.%20They%20are%20traditionally%20served%20on%20holidays%20such%20as%20Chanukah%20(when%20oil%20played%20a%20pivotal%20role%20in%20the%20miracle%20of%20the%20Chanukah%20story)%20and%20Shavuot%20(when%20dairy%20dishes%20are%20traditionally%20served).%3C/p%3E%3Cp%3EBlintzes%20are%20usually%20topped%20with%20butter,%20sour%20cream%20(my%20personal%20favorite),%20jam,%20honey%20or%20applesauce.%20A%20caviar%20filling%20is%20popular%20in%20Russian%20style%20cocktail%20parties.%3C/p%3E%3Cp%3EMy%20recipe%20for%20cheese%20blintzes%20is%20virtually%20the%20same%20as%20my%20Cheese%20Filled%20Crepes%E2%80%A6.%20except%20they%20are%20rolled%20up%20and%20then%20fried%20in%20a%20bit%20of%20butter%20or%20oil%20until%20they%E2%80%99re%20a%20little%20crispy.%20The%20heat%20from%20cooking%20these%20also%20slightly%20changes%20the%20texture%20of%20the%20cheese%20filling%E2%80%A6%20the%20filling%20becomes%20a%20bit%20smoother%E2%80%A6%3C/p%3E%3Cp%3EI%20topped%20these%20with%20a%20little%20blueberry%20pie%20filling%20and%20sour%20cream%E2%80%A6%20actually%E2%80%A6%20I%E2%80%99ll%20be%20honest%E2%80%A6%20I%20pigged%20out%20a%20little%E2%80%A6%20I%20had%20a%20couple%20with%20just%20sour%20cream%20too.%20Ahhhh%E2%80%A6%20life%20is%20good.%3C/p%3E%3Cp%3ETIPS%3C/p%3E%3Cp%3EI%20made%20mine%20using%20my%20beloved%20crepe%20pan%E2%80%A6.%20but%E2%80%A6%20it%20tends%20to%20be%20on%20the%20large%20side%20(about%208%20%C2%BD%20inch)%E2%80%A6%20I%20usually%20prefer%20making%20my%20crepes%20for%20blintzes%20a%20little%20smaller%20(about%206%20inch)%E2%80%A6%20but%20these%20worked%20fine%20too%E2%80%A6.%3C/p%3E%3Cp%3EYou%20can%20fill%20blintzes%20with%20fruit%20pie%20fillings%20as%20well%E2%80%A6.%20those%20are%20yummy%20too!%3C/p%3E%3Cp%3ETo%20make%20the%20crepes....see%20my%20previous%20posts%20%E2%80%A6.the%20Crepes%20recipe%20and%20Crepe%20Making%20Tips.%3C/p%3E%3Cp%3EThey%20really%20aren%E2%80%99t%20hard%20to%20make%E2%80%A6%20and%20you%20can%20make%20the%20crepes%20and%20filling%20ahead%20of%20time%20and%20just%20assemble%20and%20fry%20them%20when%20you%20want%20to%20make%20them.%3C/p%3E%3Cp%3EI%20hope%20you%20try%20this%20delicious%20dish!%3C/p%3E%3Cp%3ERecipe:%20Cheese%20Blintzes%3C/p%3E%3Cp%3EAll%20you%20need:%3C/p%3E%3Cp%3ECrepes%3C/p%3E%3Cp%3EAll%20you%20need%20to%20do:%3C/p%3E%3Cp%3EMake%20your%20crepes%20and%20stack%20them%20with%20waxed%20paper%20between%20each%20so%20they%20won%E2%80%99t%20stick%20to%20each%20other.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl%20mix%20the%20filling%20ingredients%20until%20well%20incorporated.%3C/p%3E%3Cp%3EFill%20each%20crepe%20up%20the%20center%20with%20about%20%C2%BC%20cup%20filling%20(amount%20will%20vary%20with%20the%20size%20of%20the%20crepe)%20leaving%20a%20wide%20border%20on%20all%20sides.%3C/p%3E%3Cp%3EFold%20in%20toward%20the%20center,%20the%20top%20and%20bottom.%3C/p%3E%3Cp%3EThen%20fold%20one%20side%20over%20the%20center.%3C/p%3E%3Cp%3EThen%20fold%20the%20other%20side%20toward%20the%20center.%3C/p%3E%3Cp%3EHeat%20enough%20butter%20or%20oil%20to%20coat%20a%20large%20skillet%20over%20medium%20high%20heat.%3C/p%3E%3Cp%3ECarefully%20place%20the%20blintz%20in%20the%20heated%20skillet%20and%20cook%20over%20medium%20high%20heat%20until%20the%20bottom%20is%20browned%20and%20crispy.%3C/p%3E%3Cp%3ECarefully%20flip%20the%20blintz%20over%20and%20cook%20until%20the%20other%20side%20is%20browned%20and%20crispy.%3C/p%3E%3Cp%3ERemove%20from%20the%20pan%20and%20drain%20on%20paper%20towels%20to%20get%20off%20the%20excess%20grease.%3C/p%3E%3Cp%3EServe%20hot%20with%20toppings.%3C/p%3E){kind=link}
