A healthier version of Ramen Noodles. Just make your own broth and seasoning. No additives here.
Ramen Noodles – Healthier
- 2 cups vegetable broth (I used Trader Joe’s Organic Vegetable Broth)
- ½ cup hot water
- 1 Tablespoon Shiro miso
- 1 package ramen noodles (about 4.2 ounces of noodles)
- 1 cup frozen peas and carrots
- 1 Tablespoon soy sauce
- 1 Tablespoon Fish Sauce
- 1 teaspoon garlic powder
- 1 scallions, green parts only, sliced
In a measuring cup add the hot water and the miso stir to dissolve.
In a large saucepan add the vegetable broth and the miso mixture and bring to a boil. Add the frozen vegetables. cook for 2 minutes.
Add the ramen and the seasonings for 3 minutes or until the ramen noodles are soft.
Add the scallions and serve.

I just knew that I would find ways to use all that miso. Well, I haven’t used it all, if that’s what you are thinking. But I certainly upped the ante on recipes that use miso.
Ramen. It actually brings back memories. My baby girl was just starting out on the swim team. Having just turned 5 years old, we went to her first swim meet. She was at the starting blocks, they blew the whistle to go and my sweet little girl stands there, petrified! I am shouting out to her to dive into the water, but she just wouldn’t have any part of it. Poor little girl. And poor mamma too. So I devised a plan.
It was for the Wednesday night meet. I prepared the Ramen and told her they were called “brave noodles”. i went on to say that if she ate them it would make her so brave that she will be able to dive into the pool and swim to the other side. She gobbled them and this time when they blew the whistle for the race to begin she dove into the water and swam to the other side. I proudly told her that I knew those brave noodles would work. We literally used to buy them by the case. They were the perfect quick hot meal. The girls loved eating the ramen.
But one day, my little girl looked at me while she was eating the ramen and said, “Mom you know these really aren’t called brave noodles, and they don’t really make you brave.” I nodded and said yes, you are right, but it helped me to think that it worked that night that you made it across the pool for the first time.
Little did I know how bad those little seasoning packets were.
As they grew older, they stopped eating them and I haven’t had ramen since then.
I have a feeling I will be making my version more often.
