Ингредиенты

  • 4 x pork chops - (8 ounce ea) butterflied
  • 2 c. water
  • 2 tsp salt
  • 1 Tbsp. sugar
  • 1 pch cumin
  • 1 pch thyme
  • 1 pch chopped garlic
  • 1 pch freshly-grnd black pepper
  • 1 pch cayenne pepper
  • 1 Tbsp. extra virgin olive oil
  • 1 ounce diced yellow onion
  • 1 ounce diced green pepper
  • 1 ounce diced celery
  • 1 pch minced garlic
  • 1 pch crushed red chiles
  • 3 ounce sliced Italian sausage
  • 4 ounce diced ham
  • 3 ounce sliced andouille Cajun sausage
  • 3/4 c. canned red kidney beans with liquid
  • 2 tsp Tabasco sauce
  • 2 c. chicken broth
  • 1/2 tsp salt
  • 1 pch saffron
  • 1/4 tsp freshly-grnd black pepper
  • 1 c. long-grain rice
  • 4 Tbsp. extra virgin olive oil
  • 1 sm yellow onion minced
  • 1 sm green pepper minced
  • 2 x garlic cloves chopped
  • 1 x celery rib diced
  • 1 c. minced mushrooms
  • 2 lrg tomatoes peeled, seeded,
  •     and minced
  • 2 Tbsp. Cajun seasoning
  • 1/4 c. thinly-sliced onions minced

  1. Mix all marinade ingredients together and bring to boil. Cold. Add in the pork chops and marinate in refrigerator 24 hrs.
  2. For the Red Beans: Saute/fry first 9 ingredients till vegetables are tender. Add in kidney beans (with liquid) and Tabasco sauce. Simmer 20 min.
  3. For the Rice: Combine first four ingredients. Cook rice in mix per package directions till done.
  4. For the Vegetables: Saute/fry in extra virgin olive oil over medium heat till tender.
  5. Mix together the cooked rice and sauteed vegetables. Add in minced tomatoes.
  6. Sprinkle each pork chop with 1/2 Tbsp. Cajun seasoning. Grill till done medium-well.
  7. Assemble by putting rice in middle of plate. Top with red beans. Place minced onion on beans. Place grilled chops on top.
  8. This recipe yields 2 servings at the Rainforest (4 at home).
