%20and%20made%20some%20beautify%20Red%20Beet%20Buns.%3C/p%3E%3Cp%3ELoved%20how%20they%20looked%20but%20hated%20how%20they%20tasted.%3C/p%3E%3Cp%3Eme:%20%22Hello?%22%3C/p%3E%3Cp%3Ecaller:%20%22Hi,%20this%20is%20Nicole%20from%20Whole%20Foods%20Market%20and%20I'm%20calling%20to%20remind%20you%20about%20the%20cooking%20class%20that%20you%20signed%20up%20for.%22%3C/p%3E%3Cp%3Eme:%20%22Cooking%20class?%22%20(First%20of%20all%20I%20had%20no%20idea%20they%20HAD%20cooking%20classes.%20Second%20of%20all,%20I%20couldn't%20remember%20the%20last%20time%20I'd%20been%20to%20Whole%20Foods)%3C/p%3E%3Cp%3Ecaller:%20%22Yes,%20you've%20signed%20up%20for%20our%20Transition%20to%20a%20Gluten%20Free%20Diet%20cooking%20class%22%3C/p%3E%3Cp%3Eme:%20%22Ooooh...(the%20bells%20are%20ringing)%20my%20daughter%20must've%20signed%20me%20up%22%3C/p%3E%3Cp%3ETurns%20out%20that%20yes,%20my%20daughter%20signed%20us%20both%20up%20for%20this%20class.%20Since%20it%20was%20free,%20I%20figured%20why%20not.%20So%20I%20went.%20It%20was%20more%20like%20a%20lecture%20than%20a%20real%20cooking%20class.%20The%20place%20was%20packed.%20The%20instructor/dietitian%20was%20wonderful%20and%20demonstrated%20how%20to%20make%20several%20dishes%20along%20with%20sharing%20some%20great%20information%20about%20eating%20gluten%20free.%3C/p%3E%3Cp%3EI%20know%20there%20are%20a%20lot%20of%20people%20out%20there%20who%20have%20to%20eat%20gluten%20free%20do%20to%20Celiac%20Cisease.%20I%20also%20know%20that%20there%20are%20a%20lot%20of%20people%20out%20there%20who%20just%20choose%20to%20eat%20gluten%20free.%20What%20I%20didn't%20know%20was%20that%20somewhere%20between%20those%20two%20reasons%20are%20the%20gluten%20intolerant.%20My%20youngest%20child%20has%20gone%20gluten%20free.%20It%20started%20out%20as%20a%20choice%20after%20finding%20out%20about%20GMO%20foods%20but%20ended%20up%20being%20more%20of%20a%20mild%20sensitivity%20reason.%20Apparently%20gluten%20can%20possibly%20cause%20a%20lot%20of%20things%20that%20you%20wouldn't%20even%20realize%20(headaches,%20hair%20loss,%20dry%20cracked%20skin%20are%20just%20a%20few%20of%20the%20possibilities).%3C/p%3E%3Cp%3EHere's%20a%20great%20list%20of%20websites%20that%20were%20recommended%20at%20the%20class%20if%20you%20want%20to%20do%20more%20research:%3C/p%3E%3Cp%3Ewww.celiac.org%3C/p%3E%3Cp%3Ewww.gluten.net%3C/p%3E%3Cp%3Ewww.csaceliacs.org%3C/p%3E%3Cp%3Ewww.celiaccenter.org%3C/p%3E%3Cp%3Ewww.foodallergy.org%3C/p%3E%3Cp%3Ewww.livingwithout.com%3C/p%3E%3Cp%3E(yes,%20I'm%20hosting%20a%20giveaway...here's%20a%20sneak%20peek.%20more%20details%20in%20a%20minute)%3C/p%3E%3Cp%3EBack%20to%20beets.%20Ok,%20so%20there%20I%20was,%20sitting%20in%20a%20room%20full%20on%20strangers,%20and%20the%20assistant%20was%20passing%20around%20one%20of%20the%20foods%20that%20was%20prepared.%20The%20star%20ingredient%20was%20suppose%20to%20be%20quinoa.%20But%20all%20I%20could%20think%20about%20were%20the%20beets%20inside%20that%20little%20cup%20that%20was%20heading%20my%20way.%20Sure,%20I%20could've%20said%20'No%20Thank%20you,%20I'll%20pass'.%20But%20that%20wouldn't%20have%20been%20very%20foodie%20of%20me.%20So%20I%20took%20the%20cup...looked%20at%20it...my%20nostrils%20flared%20a%20little%20as%20I%20eyeballed%20those%20big%20chunks%20of%20beets...sniffed%20a%20little%3C/p%3E%3Cp%3EThen%20came%20the%20tentative,%20cautious,%20very%20doubtful%20bite....%3C/p%3E%3Cp%3EOmg...it%20was%20good!!%20Really?%20Yes,%20really!!%20I%20mean...of%20course%20it%20still%20tasted%20like%20beets%20but%20there's%20something%20in%20the%20roasting%20process%20that%20mellows%20and%20sweetens%20the%20beet.%3C/p%3E%3Cp%3EQuinoa%20and%20Roasted%20Beet%20Salad%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20400'%20F%3C/p%3E%3Cp%3ETrim%20the%20greens%20off%20the%20beets.%20Scrub%20the%20beets%20and%20wrap%20them%20individually%20in%20foil.%20Bake%20for%20about%20an%20hour,%20until%20for%20tender.%20Let%20them%20cool.%20Once%20cool%20enough%20to%20handle,%20peel%20off%20the%20skins,%20cut%20into%201/4%22%20dice.%20Set%20aside.%3C/p%3E%3Cp%3EWhile%20the%20beets%20are%20in%20the%20oven,%20cook%20your%20quinoa.%201%20cup%20of%20dry%20quinoa%20yields%20about%203%20cups.%20This%20recipe%20calls%20for%204%20cups.%20You%20can%20cook%202%20cups%20of%20dry%20quinoa%20per%20the%20package%20instructions%20and%20put%20whats%20leftover%20in%20the%20fridge.%20It'll%20be%20good%20for%20a%20couple%20of%20days.%20Or,%20you%20can%20freeze%20it.%20Quinoa%20freezes%20very%20well%20and%20thaws%20quickly%20for%20future%20use.%3C/p%3E%3Cp%3EWash%20the%20beet%20greens%20and%20remove%20the%20center%20vein.%20Steam%20for%20for%202%20or%203%20minutes%20then%20plunge%20them%20into%20ice%20water%20to%20'refresh'%20them%20a%20bit.%20Squeeze%20them%20dry%20and%20chop.%20(beet%20greens%20act%20a%20lot%20like%20spinach%20greens).%3C/p%3E%3Cp%3EIn%20a%20large%20heavy%20skillet,%20heat%20the%20olive%20oil%20over%20medium%20heat.%20Add%20the%20garlic%20and%20cook,%20stirring,%20until%20fragrant%20(about%2030%20seconds).%20A
