Quick Honey Lemon Glazed Carrots

Ингредиенты

  • 1 bn (about 1 lb.) carrots, green stalks removed, trimmed, peeled, and cut diagonally into 3/4-inch lengths
  • 1 x Strip lemon zest, removed with a vegetable peeler
  • 1 Tbsp. Honey
  • 1 pch Dry cumin, optional
  • 1 pch Coarse (kosher) salt or possibly sea salt
  • 1/2 x Lemon, or possibly to taste , Juice of
  •     Freshly grnd black pepper, to taste

  1. Preparation Time: 5 min
  2. Cooking Time: 20 min
  3. Place the carrots, lemon zest, honey, cumin and salt in a saute/fry pan or possibly low-sided saucepan. Add in sufficient cool water to not quite cover the carrots.
  4. Bring to a boil.
  5. Cook, uncovered, stirring once or possibly twice and adjusting the heat as necessary to maintain a fairly vigorous but not violent boil till the liquid has nearly evaporated, about 14 min. If the carrots are not yet tender, lower the heat slightly. (The recipe can be made ahead to this point. Cold and then cover and chill. Reheat when needed, adding a couple of spoonfuls of water if the carrots seem dry.)
  6. Lower the heat and toss gently with a wooden spoon till the liquid reduces to create a light, syrupy glaze, usually a couple of min. Remove the lemon zest. Stir in the lemon juice and pepper and serve warm. Nutrition
