Quick Chicken Coq Au Vin
INGREDIENTS:
- 2 onions- sliced
- 1 package mushrooms-washed and quartered
- 4 sliced bacon
- 4 chicken breasts
- 2 tablespoons oil
- Salt & pepper, to taste
- 3/4 cup white wine, divided
- 3/4 cup chicken stock, divided
- parsley-chopped
DIRECTIONS:
Preheat oven to 350 degrees. In a large skillet over medium heat, fry the bacon in the oil until crisp. Remove the bacon and fry the chicken in the pan drippings, season with salt and pepper. Add the onions and mushrooms and fry for about 4-5 minutes more. Mix together the wine and chicken broth. Add 1/2 to the pan. Return the bacon tothe pan. Cover and cook in the oven for 35 minutes. After 20 minutes add the rest of the wine and chicken stock and remove the lid. Continue to cook for 15 minutes. Plate and sprinkle with parsley.
