  • 29 oz all-purpose flour
  • 1 Tbsp salt
  • 20 oz shortening
  • 1.25 cups cold water
  • 52 oz eggs
  • 2 qts cream or half-and-half
  • 2 qts milk
  • 1.25 tsp salt
  • 5 tsp white pepper
  • 3 lbs swiss cheese, grated
  • 1 lb bacon, chopped, cooked
  • 8 oz parmesan cheese, grated

  1. Make pastry according to pastry recipe.
  2. Line twelve 8-inch pie pans with pastry, 5 oz per pan.
  3. Partially bake shells at 375F for about 10 minutes.
  4. Beat eggs; add cream, milk and seasoning.
  5. Sprinkle partially baked shells with swiss hceese, 4 oz per pie, and bacon or ham, 2 oz per pie.
  6. Pour egg mixture into shells, 5 oz per pie (about 2 cups).
  7. Sprinkle with parmesan cheese, 2 Tbsp per pie.
  8. Bake until custard is set and lightly browned - 180F internal end-poin temperature
