- 1Â 1/2 lb Fresh lamb's quarters or possibly spinach
- 3 Tbsp. Minced onion
- 2 Tbsp. Bacon fat or possibly vegetable shortening
- 1/2 c. Cooked pinto beans
- 1 tsp Vinegar

- Cook the spinach, drain, and chop. Saute/fry the onion in the oil till soft.
- Add in the other ingredients and continue to saute/fry for 5 - 10 min.
- Serves: 4 to 6
