Simple, yet delicious and light cottage cheese cake. Ideal to serve with a whole fruit jam.

500 g soft fresh cheese, or quark cheese
4 eggs
8 tbs semolina
1/2 cup milk
150 g sugar.
1 1/2 (11 g) packet of dry yeast
1 tsp vanilla extract

In a blender or mixing bowl chop the cottage cheese with fork.
Add eggs and beat at medium speed. Add the semolina, milk, sugar, yeast and vanilla extract. Mix the ingredients until smooth and uniform.
Pour the batter into the greased and lightly floured bundt cake mold, 20 cm in diameter. Bake in the oven at 190°C for about 30-35 minutes. Use a toothpick to check if the cake is done.
Remove from oven and leave for 10 minutes to cool down. Invert the cake on a rack and let cool completely.
