So I’m doing a little experiment for the month of October and seeing how I feel sans refined flours, refined sugars, and grains.
And years ago, when I was preggo with Katie (my 1st baby) I naturally gave up grains and refined sugars + flours because I noticed how much better I felt without them (although I did keep Ezekiel bread – and still had a bit of all of it on occasion, I just didn’t have them a s staples in my diet).
Anyhow, I wanted to have some options on hand for a little sweet bite sans the refined flours and sugars while I do this little experiment and naturally, it had to include pumpkin because, it’s October (just about).
So this is what I came up with. And they are so yum!
Almond butter + pumpkin puree + a little almond flour + maple syrup + pumpkin pie spice + dark chocolate
That is all it takes to whip these little balls up.
They are delish with a cup of coffee in the afternoon, make a great pre or post workout snack and my kids love when I pop one in their lunch box too!
Pumpkin Spice Energy Ball
Yield: 8 balls

Total Time: 20 minutes
Ingredients:
- ¼ cup almond butter
- ¼ cup pumpkin puree
- ½ cup almond flour
- 1 tbsp. real maple syrup
- 1 tbsp. chia seed
- 1 tsp. pumpkin pie spice
- Pinch of kosher salt
- 1.5 ounces dark chocolate
Directions:
In a large bowl combine almond butter, pumpkin puree, almond flour, maple syrup, chia seeds, pumpkin pie spice, and kosher salt. Mix until everything is well incorporated.
Scoop up about 1 tbsp. of ‘dough’ and roll in the palm of your hands to create a small, golf-sized ball. You should get about 8 balls.
Place the balls on a plate lined with parchment paper (or a tray with a silpat mat) in the freezer while you melt your chocolate.
Set up a double boiler (see example in this video). Add two ounces of dark chocolate and stir periodically until the chocolate has melted down.
Remove the pumpkin balls form the freezer and dip each one in the chocolate to coat half of the pumpkin ball. Place back on the parchment paper and continue until you have dipped all the pumpkin balls.
Place them back in the freezer and enjoy any time you need a quick and delicious nutrient packed snack.
Makes 8 balls.
