Pumpkin Chocolate Chip Sunflower Seed Bread
- 1 1/2 cups flour
- 1 t baking powder
- 1/2 t baking soda
- 1/2 t salt
- 1 cup canned solid-packed pumpkin
- 1/3 cup vegetable oil
- 2 large eggs
- 1 t pumpkin-pie spice*
- 1 1/4 c sugar plus 1 t sugar
- 1/2 c mini chocolate chips
- 1/4 c unsalted sunflower seeds
- Makes one loaf
- Preheat oven to 350º
- Lightly grease and flour a 9 x 5 inch loaf pan
- In a medium bowl,
- Whisk together flour, baking powder, baking soda, and salt
- In another medium bowl,
- Whisk together pumpkin, oil, eggs, pumpkin pie spice and sugar
- Using a spatula fold flour mixture into pumpkin mixture
- Stir just until combined
- Gently fold in mini chocolate chips
- Pour batter into prepared pan
- Sprinkle top of bread with sunflower seeds
- Sprinkle 1 t sugar over sunflower seeds
Bake at 350 degrees for 45-50 minutes or
Until a toothpick inserted in center comes out clean.
Remove from oven
Cool in pan on wire rack for 5 minutes
Remove bread from pan
Cool bread completely on wire rack
To make pumpkin pie spice~
Mix together:
1/8 t ground nutmeg, cloves, ginger, allspice and
1/4 t ground cinnamon. Store mixture in an air-tight container.
