  • 1 c. rye flour
  • 1/2 c. all-purpose flour
  • 1/2 c. whole wheat flour
  • 2 tsp baking pwdr
  • 1/4 tsp baking soda
  • 5 1/2 tsp caraway seeds
  • 3/4 c. skim lowfat milk
  • 1/4 c. vegetable oil
  • 1/4 c. molasses
  • 2 x Large eggs lightly beaten
  • 1 tsp cider vinegar
  • 1/2 c. finely minced onion
  • 1/2 c. finely shredded reduced-fat Cheddar cheese (2 ounces)
  •     Vegetable cooking spray

  1. Combine first 6 ingredients in a large bowl; make a well in center of mix. Combine lowfat milk, oil, molasses, Large eggs, and vinegar; add in to dry ingredients, stirring just till dry ingredients are moistened. Stir in onion and cheese.
  2. Spoon batter into an 8 1/2- x 4 1/2- x 3-inch loafpan coated with cooking spray. Bake at 350F for 50 to 60 min or possibly till a wooden pick inserted in center comes out clean. Let cold in pan 10 min; remove from pan, and let cold on a wire rack.
  3. Yield: 16 servings (116 calories per 1/2-inch slice).
