Ингредиенты

  • 1 gal water
  • 4 x green plantains
  •     Oil for sauteing
  • 1 x white onion cut 1/4" dice
  • 1 x green bell pepper cut 1/4" dice
  • 1 x red bell pepper cut 1/4" dice
  • 1 lrg round tomato cut 1/4" dice
  • 2 x chipotles minced
  • 1/2 c. white wine
  • 1 lb crabmeat cleaned
  • 2 Tbsp. minced cilantro
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  •     Canola or possibly corn oil for frying
  • 1 c. chicken stock

  1. In a large pot, bring water to a boil and blanch plantains. Peel plantains and cut into 2-inch segments.
  2. In a saute/fry pan, heat oil and saute/fry onions, peppers and tomatoes. When soft, add in the chipotles and white wine. Cook till liquid is almost evaporated. Add in crabmeat and cook for 3 min. Add in cilantro and season with salt and pepper.
  3. Heat oil to 350 degrees. Fry plantains for 5 min, then drain and divide into 4 equal portions. Place each portion individually in a mortar, and mash plantains, adding chicken stock as needed. Coat sides of mortar with plantain and fill with crab stuffing. Fold over the edges to create a dumpling and flip onto a plate.
  4. This recipe yields 4 servings.
