That's a mouthful...truly! And a delicious one, too! For New Year's Eve the mister and I spared no caloric expense...we, meaning me, prepared a feast that was delicious right down to the last crumb...and then we, meaning he, reached for the Pepto Bismol and rang in the new year! The mister has a tendency to over do things, he's such a party animal! Along with stuffing his face I'll bet he managed to change the channel, with the remote that seems to always be glued to his hand, every six seconds over the course of four hours...quite impressive, no? We were able to see fireworks from around the world in 6 second intervals! And what's even more impressive is as I was drifting off to dreamland the mister said, "I hope we're having quail and black-eyed peas for our first meal of the day for the new year, we need to change our luck!" What does one do with that? I mean, should I have immediately gotten out of bed, changed my clothes, jumped into the car and raced to the QUAIL STORE so we'd have good luck? Well, I didn't. I ignored the mister and went to sleep. First thing New Year's Day and the mister asks about the quail. No lie. I had black-eyed peas, fresh ones in the fridge, as we always have them on New Year's Day...but quail? No, no quail, we are not quail eaters. The mister made some insane comment about how we'll only have half as much luck this year, due to our lack of quail...remember the old saying, "If it weren't for bad luck we'd have no luck at all?" Well now, apparently, we'll have only have half as much bad luck...things are looking up!

There are all kinds of ways to wrap dates - with bacon and ham and scallions and all of them are great...but here's the thing about this appetizer...prosciutto gets crispy when baked...crispy! Majool dates are pitted, then stuffed with Gorgonzola cheese and finally wrapped with prosciutto...so when you bite into one of these babies you'll first taste the slightly salty, crisp prosciutto, then the sweet chewiness of the date and the creamy warmth of the Gorgonzola...I'm telling you, these will fly off the baking sheet so fast you won't even have time to put them on a pretty plate! I only made a dozen of these, because I didn't know if the mister would like them and I figured a dozen would serve me just fine...but he did like them and before I knew it they were gone! You'll like them too!

Prosciutto Wrapped-Stuffed Dates - Pots and Pins - Inspired by a Recipe My Mom Used to Make

16 Majool dates (1/2 lb.) pitted (I purchased my dates in the produce section at Safeway, they always carry them, they are in a box next to the lemons, and you use a scoop to take what you want)

Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Slice each date and remove pit. Spread each date open, stuff about 1/2 teaspoon of cheese inside and then close date by wrapping a piece of prosciutto around it. Place on prepared baking sheet and bake for 6 to 8 minutes or until the prosciutto is crispy and the cheese is warm and just beginning to melt. Serve warm or at room temperature. Makes 16. Serves 8.

Pretend these are arranged nicely on a beautiful plate...that's what I was going to do before we ate them all right off the baking pan! These are one of my very favorite appetizers...don't wait for another "Eve" to make them...they'd be perfect for any night of the week when you just want a little something extra!
