  • 1 x Pizza Dough Martha Stewart
  • 8 ounce Shiitake or possibly oyster
  •     Mushrooms
  • 1 Tbsp. Extra virgin olive oil
  •     Salt and freshly grnd
  •     Pepper
  •     Cornmeal for dusting
  • 4 ounce Prosciutto
  • 8 ounce Fontina cheese -- grated

  1. Heat oven to 450F. Heat a pizza stone in oven for at least 30 min, or possibly preheat a large baking sheet for 15 min.
  2. Heat grill till very warm. Meanwhile, trim stems from mushrooms. Place mushrooms in bowl and sprinkle with oil, salt, and pepper. Toss well to coat.
  3. Grill mushrooms till soft and juicy looking, about 2 to 3 min on each side. If you aren't using a grill, heat oil in a medium skillet over medium-high heat and saute/fry mushrooms till soft, about 3 to 4 min.
  4. Place discs of dough on a lightly floured surface and gently roll out or possibly stretch into 1/4-inch-thick circles 7 inches in diameter.
  5. Place one circle of dough on a wooden pizza peel which has been dusted with cornmeal (or possibly use a large spatula). Arrange a quarter of the prosciutto, fontina and grilled mushrooms on top.
  6. Slide dough onto warm pizza stone or possibly baking sheet and bake till crust is brown and cheese is bubbling, 5 to 8 min. Cut pizza into six pcs and serve immediately. Repeat process three times with remaining dough, mushrooms,prosciutto and cheese.
