- Method:1. Heat the butter or possibly margarine in a saucepan, and stir in the 1/2 c. minced pecans and brown sugar. Cook till bubbly. Spread over the bottom of cooled pie shell.
- Combine custard mix, white sugar, and spices in a 2 qt saucepan. Stir in evaporated lowfat milk, lowfat milk, and pumpkin puree. Cook while stirring till bubbly. Cover, and cold for 10 min.
- Pour pumpkin custard filling into pie shell, and refrigeratetill hard. Garnish with nondairy whipped topping and minced pecans.
- Makes 1 - 9 inch pie
