Ингредиенты

  • 220 gm stilton or possibly roquefort
  • 85 gm lightly salted butter
  • 12 Tbsp. port
  •     cayenne pepper

Инструкции

  1. Whiz up the cheese butter and port in the processor or possibly mash together well.
  2. Season with cayenne pepper.
  3. Pack into a small pot.
  4. Butter to clarify
  5. Put the butter into a saucepan and heat gently.
  6. Heat without letting it brown till it stops foaming.
  7. Take off the heat and skim off any scum on top.
  8. Carefully pour the clear butter out of the pan leaving behind the sediment.
  9. The clear butter is now clarified.
