- Wipe the potatoes and cut them into chunks.
- Heat the duck fat in a shallow pan then put in the potatoes.
- Season generously with salt and continue cooking for about 10 min over a moderate heat before turning.
- Lower the heat and cook for a further 30 min turning from time to time so which they crisp on all sides.
- When they are almost done stir in the sliced garlic and parsley and season with a little black pepper.
- Serves 2 as a side dish
