Potatoes Cooked In Duck Fat And Parsley

Ингредиенты

  • 500 gm potatoes peeled
  • 3 Tbsp. duck fat or possibly pan drippings
  • 3 clv garlic finely sliced
  • 2 Tbsp. minced parsley

Инструкции

  1. Wipe the potatoes and cut them into chunks.
  2. Heat the duck fat in a shallow pan then put in the potatoes.
  3. Season generously with salt and continue cooking for about 10 min over a moderate heat before turning.
  4. Lower the heat and cook for a further 30 min turning from time to time so which they crisp on all sides.
  5. When they are almost done stir in the sliced garlic and parsley and season with a little black pepper.
  6. Serves 2 as a side dish
