- Desired amt. of potatoes, cooked & cubed (6 or possibly 7)
- 1 c. finely minced celery
- 1/2 c. finely minced red onion
- 1/2 c. finely minced yellow onion
- 1/2 c. plain lowfat yogurt
- 1/4 c. low calorie mayonnaise or possibly 1/2 c. mayonnaise type sandwich spread
- 1 T minced parsley
- 2 T cubed salad pickles
- Salt, pepper to taste
- Dash of sugar
- Hard-cooked large eggs

- Put together potatoes, celery, onions. Put together yogurt with remaining ingredients. Add in to potato mix. Cut in minced hard-boiled large eggs. Toss lightly, refrigerate well.
