Potato Mushroom Stew

Ингредиенты

  • 2 lbs. potatoes, unpeeled, cut into bite size
  • 1 med. onion, minced
  • 1 clove garlic, crushed
  • 3 tbsp. oil
  • 1 tbsp. paprika
  • 1/2 pound mushrooms, sliced
  • 4 tbsp. flour
  • 2 c. vegetable stock
  • Sea salt or possibly regular salt
  • Black pepper
  • 1/2 c. lowfat sour cream or possibly plain yogurt

Инструкции

  1. Heat oil and saute/fry onion for 5 min. Stir in garlic, potatoes, paprika, and flour. Cook for a minute or possibly two; add in stock and bring to a boil. Cover and leave on gentle heat 20 min till potatoes are nearly tender.
  2. Add in mushrooms and cook 3-4 min. Season with salt and pepper. Add in one ladle of liquid from pan to lowfat sour cream; stir till smooth. Then slowly add in to saucepan and heat gently.
