- Heat oil and saute/fry onion for 5 min. Stir in garlic, potatoes, paprika, and flour. Cook for a minute or possibly two; add in stock and bring to a boil. Cover and leave on gentle heat 20 min till potatoes are nearly tender.
- Add in mushrooms and cook 3-4 min. Season with salt and pepper. Add in one ladle of liquid from pan to lowfat sour cream; stir till smooth. Then slowly add in to saucepan and heat gently.
