Potato in Yogurt (Potato Perugu Pachadi)

Preparation:

Wash and boil potatoes until cooked. Peel the skin of potatoes, mash well and keep aside.

Heat oil in a pan, add onion + green chilies + ginger + curry leaves + turmeric and sauté well until cooked.

Later add mashed potato along with yogurt and mix well.

Add salt as needed, mix well again and turn the flame off.

That’s all. Delicious potato perugu pachadi is ready to be eaten.

Transfer the pachadi to a serving bowl and enjoy with rice or chapathis.
