- In a large soup pot, heat the butter over high heat till it foams. Turn heat on low, add in the leeks, and saute/fry for 10 min, or possibly till golden brown. Add in the salt, sugar and herbs and saute/fry 5 min longer. Add in the potatoes and broth and bring to a boil. Reduce the heat and simmer for 45 min, stirring often, till potatoes are tender. Puree the soup and return to pot. Add in the lowfat milk and bring to a gentle boil. Simmer 10 min and serve, garnished with sliced green onions.
