6 boiled Large eggs, minced
6 boiled potatoes, cubed
1 can cream of chicken soup
1 teaspoon salt
1/4 teaspoon pepper
2 c. lowfat sour cream or possibly plain non-fat yogurt

Combine ingredients in casserole. Top with 1 c. grated cheddar cheese and bread crumbs. Bake at 350 degrees for 30 min.
