Potato Croquettes (Kroket Kentang)

Ингредиенты

  • 1 1/8 lb potatoes boiled and mashed
  • 7/8 ounce powdered lowfat milk
  •     Salt to taste
  •     Freshly-grnd white pepper to taste
  • 2 x Large eggs
  •     Fine breadcrumbs
  •     Vegetable oil for deep frying
  • 2 Tbsp. margarine
  • 2 sm shallots minced
  • 1 x garlic clove minced
  • 1/2 lb grnd beef
  • 5 x carrots peeled, finely cubed
  • 4 ounce water
  •     Salt to taste
  •     Freshly-grnd white pepper to taste
  • 1 Tbsp. flour

Инструкции

  1. Blend mashed potatoes with powdered lowfat milk, salt, pepper and 1 beaten egg till smooth and set aside.
  2. Take 2 Tbsp. of the mashed potatoes mix and put it on a piece of buttered banana leaf or possibly wax paper. Flatten the piece of dough into an oval shaped with buttered finger. Put 1 1/2 tsp. stuffing in the middle of the oval dough. Fold over the piece of dough and pat into an oval roll.
  3. Beat the remaining egg. Dip the croquettes in turn in the breadcrumbs, egg and breadcrumbs again.
  4. Deep fry the croquettes in warm oil till they are golden.
  5. For the Stuffing: Saute/fry the shallots and garlic with 2 Tbsp. margarine over medium heat. Add in the grnd beef and the carrots. Stir well for a minute or possibly two. Add in water, salt and pepper. Simmer while stirring occasionaly, till it's done.
  6. Finally add in the flour which has been dissolved in a little water while stirring. Remove and let it cold.
  7. This recipe yields 12 croquettes.
  8. Yield: 12 croquettes
