- Blend mashed potatoes with powdered lowfat milk, salt, pepper and 1 beaten egg till smooth and set aside.
- Take 2 Tbsp. of the mashed potatoes mix and put it on a piece of buttered banana leaf or possibly wax paper. Flatten the piece of dough into an oval shaped with buttered finger. Put 1 1/2 tsp. stuffing in the middle of the oval dough. Fold over the piece of dough and pat into an oval roll.
- Beat the remaining egg. Dip the croquettes in turn in the breadcrumbs, egg and breadcrumbs again.
- Deep fry the croquettes in warm oil till they are golden.
- For the Stuffing: Saute/fry the shallots and garlic with 2 Tbsp. margarine over medium heat. Add in the grnd beef and the carrots. Stir well for a minute or possibly two. Add in water, salt and pepper. Simmer while stirring occasionaly, till it's done.
- Finally add in the flour which has been dissolved in a little water while stirring. Remove and let it cold.
- This recipe yields 12 croquettes.
- Yield: 12 croquettes
