- Place potatoes, onions, and salt in water to cover in a large pot. Simmer until tender, about 15 min.
- Put in blender or food processor (or use an immersion blender) and puree until slightly chunky.
- Return to soup pot.
- Add in half and half, butter, and cheese.
- Simmer until hot, but don't boil.
- Good served with cornbread.
