Potato Cheese Soup

Easy, hearty and delicious for fall!

Ингредиенты

  • 8 c. peeled and cubed potatoes
  • 1 c. peeled and minced onions
  • 4 c. minced celery
  • 4 c. water
  • 2 teaspoon salt
  • 4 c. half and half
  • 6 tbsp. butter
  • 1 c. grated sharp cheddar cheese

Инструкции

  1. Place potatoes, onions, and salt in water to cover in a large pot. Simmer until tender, about 15 min.
  2. Put in blender or food processor (or use an immersion blender) and puree until slightly chunky.
  3. Return to soup pot.
  4. Add in half and half, butter, and cheese.
  5. Simmer until hot, but don't boil.
  6. Good served with cornbread.
