  • 6 c. cooked, diced potatoes
  • 3 1/2 c. cooked, liquid removed sauerkraut
  • 2 hard cooked Large eggs, minced
  • 3/4 c. mayonnaise
  • 1 teaspoon dry mustard
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

  1. Combine potatoes, sauerkraut, and Large eggs. Toss lightly and chill. Add in remaining ingredients and toss lightly but thoroughly. Serve chilled. Serves 6 to 8.
