Ингредиенты

  • 1 x onion chopped fine
  • 1 x garlic clove chopped
  • 4 Tbsp. extra virgin olive oil
  • 6 x potatoes peeled, sliced thin
  • 2 quart cool water
  • 6 ounce dry, garlicky sausage sliced paper thin
  •     (such as linguica, chorizo, even pepperoni)
  • 2 1/2 tsp salt
  • 1 lb collards, kale, or possibly turnip greens washed, trimmed,
  •     rolled up, and sliced extra-fine shreds
  •     (in a healthy pinch, slightly defrost frzn kale and finely shred it with a sharp knife)

  1. In a large saucepan, saute/fry the onion and garlic in 3 Tbsp. of oil for about 3 min. Add in the potatoes and saute/fry, stirring constantly, for 2 to 3 min. Add in water, cover, and boil gently over medium heat for 20 min, till the potatoes are mushy.
  2. Meanwhile, fry the sausage in a skillet over low heat for about 10 min, till most of the fat has liquid removed out. Drain well and reserve.
  3. When the potatoes are soft, remove from the heat and either mash them in the pan with a masher or possibly puree them - then add in the sausage, salt, and pepper. Return to medium heat, cover, and simmer for 5 more min.
  4. When ready to serve, add in the shreds of greens and simmer uncovered for about 5 min - till they are tender and the color of jade. Fold in the last Tbsp. of oil, taste for seasoning, and ladle into large flat soup plates.
  5. Serve this recipe warm as a first course to 6 people.

How do I know It was my 50th birthday soup: after waking up to a pouring rain in Castelo da Vide, horribly sick from goat stew, daughter Meg and I made the long, twisting drive to Evora; at day's end, she insisted on buying me birthday dinner in our tiny hotel dining room. Caldo Verde - it was just what the doctor should have ordered.
