The weather is getting warmer and that means that we will be seeing more and more fresh vegetables. Even though I am not a fan of tomatoes until they are fresh in mid-summer,once in a while I pick some up for salads. I picked up a package of grape tomatoes that were very flavorful for this time of year. They tasted so good, I thought I would try something new with them. Enter Portobello Mushroom Bruschetta Pizza . They are perfect for an appetizer or served for dinner with a large field green salad.
Portobello Mushroom Bruschetta Pizza
INGREDIENTS
- 2 Tablespoons olive oil - divided
- 4 Portobello Mushrooms (cleaned and gills removed)
- 1 Pint grape tomatoes
- 1/4 Cup of chopped fresh basil - chopped
- 2 Cloves of chopped garlic
- 1/4 Cup grated mozzarella cheeseINSTRUCTIONS
- Coarsely chop tomatoes and place in bowl
- Add fresh chopped basil,garlic and olive oil and set aside
- Spread olive oil on a grill or grill pan and heat
- Place portobellos on the grill (pan) gill side up and grill for approximately 8-10 minutes
- Turn over and grill for 5 minutes more -- until mushrooms begin to soften
- Fill the mushrooms with tomato mixture and top with mozarella cheese
- Place under broiler until cheese melts
