,%20brown%20rice,%20and%20a%20quick%20pickled%20cucumber%20sesame%20salad.%3C/p%3E%3Cp%3ETo%20be%20honest,%20by%20the%20end%20of%20the%20whole%20process,%20I%20was%20so%20tired%20that%20I%20did%20not%20want%20to%20even%20see%20another%20pot%20sticker%20for%20a%20long%20time...%20But%20that%20feeling%20has%20passed%20by%20now%20and%20I%20am%20thrilled%20to%20know%20that%20our%20chest%20freezer%20is%20bulging%20with%20three%20big%20bags%20full%20of%20these%20beauties.%3C/p%3E%3Cp%3EThe%20process%20is%20pretty%20simple%20if%20a%20bit%20time-consuming%20and%20labor-intensive.%20There's%20a%20lot%20of%20slicing%20and%20dicing%20to%20make%20the%20filling%20and%20then%20quite%20a%20lot%20of%20filling%20and%20crimping%20to%20put%20the%20dumplings%20together.%20Definitely%20way%20more%20fun%20with%20at%20least%20one%20other%20person%20and%20ideally,%20a%20couple%20of%20friends%20(you%20can%20divide%20up%20your%20haul%20at%20the%20end).%3C/p%3E%3Cp%3EI%20recommend%20using%20high-quality,%20organic%20ingredients.%20My%20filling%20was%20a%20mix%20of%20veggies%20--%20Napa%20cabbage,%20carrots,%20cilantro,%20leeks,%20and%20garlic.%3C/p%3E%3Cp%3EAnd%20a%20whole%20lotta%20pork%20that%20I%20bought%20at%20Fleisher's,%20our%20amazing%20local%20butcher%20shop%20that%20sells%20only%20locally-raised,%20organic%20and%20grass-fed%20meats.%20Buying%20meat%20from%20Fleisher's%20pretty%20much%20takes%20the%20guesswork%20out%20of%20the%20process.%20They%20also%20know,%20well,%20EVERYTHING%20about%20meat...%3C/p%3E%3Cp%3EBut%20if%20eating%20flesh%20is%20not%20your%20bag,%20you%20could%20easily%20omit%20the%20meat%20and%20just%20use%20veggies%20-%20they'll%20still%20be%20totally%20delicious%20(and%20significantly%20cheaper%20than%20the%20version%20with%20meat.)%20In%20fact,%20next%20time%20I%20make%20these,%20I'm%20going%20all%20veggie%20-%20cheaper,%20healthier%20and%20a%20little%20bit%20easier.%3C/p%3E%3Cp%3EOr,%20if%20you%20do%20dig%20meat%20but%20are,%20say,%20an%20observant%20Jew,%20you%20can%20use%20ground%20beef,%20chicken%20or%20turkey%20in%20its%20place%20or%20substitute%20shrimp.%3C/p%3E%3Cp%3EYou%20can%20also%20make%20the%20dough%20for%20the%20dumpling%20wrappers%20yourself%20if%20you've%20got%20that%20kind%20of%20time%20on%20your%20hands%20and%20are%20feeling%20ambitious.%20If%20not,%20you%20can%20just%20buy%20gyoza%20or%20wonton%20wrappers%20at%20an%20Asian%20foods%20or%20regular%20grocery%20store%20(I%20got%20mine%20at%20Hannaford's).%3C/p%3E%3Cp%3ELikewise,%20there's%20no%20real%20right%20or%20wrong%20way%20to%20wrap%20them.%20I%20went%20with%20the%20more%20traditional%20pot%20sticker%20crimping%20method%20while%20my%20husband%20preferred%20to%20wrap%20his%20up%20like%20little%20presents%20-%20I%20think%20they%20turned%20out%20pretty%20gorgeous,%20don't%20you?%3C/p%3E%3Cp%3EThe%20recipe%20below%20is%20one%20I've%20adapted%20from%20several%20that%20I%20found%20online%20as%20well%20as%20the%20one%20I%20consulted%20in%20the%20Joy%20of%20Cooking.%3C/p%3E%3Cp%3EPork%20&%20Veggie%20Pot%20Stickers%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3E*%201%20head%20of%20Napa%20cabbage,%20shredded%3C/p%3E%3Cp%3E*%203%20packs%20of%20pot%20sticker%20skins%20-%20try%20to%20find%20the%20circular%20ones%20(even%20though%20I%20could%20not)%3C/p%3E%3Cp%3ETo%20make%20the%20filling:%3C/p%3E%3Cp%3ESlice%20or%20shred%20the%20Napa%20cabbage%20until%20no%20large%20pieces%20remain.%20Place%20the%20shredded%20cabbage%20in%20a%20colander,%20sprinkle%20a%20whole%20lot%20of%20salt%20over%20it,%20then%20set%20it%20aside%20for%2030%20minutes%20while%20you%20prep%20the%20rest%20of%20the%20filling.%20The%20salt%20will%20pull%20the%20water%20out%20of%20the%20cabbage%20so%20you%20want%20to%20give%20it%20time%20to%20work.%20At%20the%20end%20of%2030%20minutes,%20squeeze%20the%20remaining%20water%20out%20of%20the%20cabbage%20with%20your%20hands%20(you%20can%20also%20wrap%20it%20in%20a%20dishtowel%20or%20cheesecloth%20to%20really%20wring%20it%20out,%20if%20you%20prefer.)%20Discard%20the%20salty%20water%20and%20put%20the%20remaining%20cabbage%20in%20a%20large%20bowl.%3C/p%3E%3Cp%3E2.%20Add%20the%20rest%20of%20the%20vegetables,%20herbs,%20garlic,%20ginger%20and%20the%20pork,%20sprinkle%20with%20the%20soy%20sauce,%20sesame%20oil,%20and%20cornstarch%20and%20stir%20well%20to%20combine.%3C/p%3E%3Cp%3ETo%20wrap%20the%20pot%20stickers:%3C/p%3E%3Cp%3ESet%20up%20a%20small%20bowl%20of%20water%20that%20you'll%20use%20to%20seal%20the%20wrappers%20with%20and%20set%20out%20a%20plate%20to%20do%20your%20wrapping%20on.%20Put%20a%20dollop%20of%20filling%20in%20the%20center%20of%20the%20wrapper.%3C/p%3E%3Cp%3EDip%20your%20finger%20in%20the%20bowl%20of%20water%20and%20wet%20along%20two%20(consecutive)%20edges%20of%20the%20wrapper.%3C/p%3E%3Cp%3EPick%20up%20two%20opposite%20edges%20and%20pinch%20them%20together%20in%20the%20middle.%3C/p%3E%3Cp%3EStarting%20from%20that%20center%20point,%20crimp%20your%20way%20down%20one%20side%20of%20the%20wrapper.%3C/p%3E%3Cp%3EThen%20crimp%20your%20way%20down%20the%20other%20side,%20making%20sure%20you%20pinch%20tightly%20enough%20to%20really%20bond%20the%20edges%20of%20the%20wrapper%20together%20fully.%3C/p%3E%3Cp%3ESet%20them%20on%20a%20wax%20paper%20covered%20baking%20sheet%20as%20you%20finish%20them%20and%20cover%20with%20plastic%20wrap%20(or%20just%20a%20big%20plastic%20bag%20-%20even%20better!)%20as%20you%20work%20to%20prevent%20the%20dumplings%20from%20drying%20out.%3C/p%3E%3Cp%3EUse%20right%20away%20or%20freeze%20on%20the%20cookie%20sheet%20and%20then%20place%20in%20a%20heavy-duty%20Ziploc%20and%20freeze%20for%20up%20to%20three%20months.%3C/p%3E%3Cp%3ETo%20cook:%3C/p%3E%3Cp%3E1.%20Heat%201%20Tbsp%20of%20peanut%20oil%20in%20a%20frying%20pan%20over%20medium%20high%20flame%20until%20the%20oil%20is%20shimmering.%3C/p%3E%3Cp%3E2.%20Place%20the%20pot%20stickers%20in%20the%20pan,%20flat-side%20down,%20they%20should%20not%20be%20touching.%20Fry%20them%20for%201-2%20minutes%20until%20the%20bottoms%20are%20a%20light%20golden%20brown.%3C/p%3E%3Cp%3E3.%20Add%201/4%20cup%20of%20water%20and%20immediately%20cover%20with%20a%20tight-fitting%20lid.%20Reduce%20the%20heat%20to%20medium%20and%20let%20steam%20for%204%20minutes.%3C/p%3E%3Cp%3E4.%20Remove%20the%20lid%20and%20cook,%20uncovered%20for%20another%204%20minutes%20or%20until%20all%20the%20water%20has%20evaporated.%20The%20bottom%20of%20the%20pot%20stickers%20should%20be%20nice%20and%20brown%20and%20the%20insides%20should%20be%20fully%20cooked%20-%20cut%20into%20one%20to%20make%20sure%20nothing%20is%20raw%20in%20there.%20If%20they%20need%20more%20time,%20add%20a%20bit%20more%20water%20and%20steam%20for%20a%20few%20more%20minutes%20with%20the%20cover%20on.%20Then%20remove%20from%20the%20pan%20and%20serve%20with%20the%20dipping%20sauce.%3C/p%3E){kind=link}
